The Modified Keto Cookbook, please take a look at a page from our familys keto cookbook, circa 1993. Back then, the very notion that delicious recipes could be designed, calculated, prepared, and beautifully photographed for us in advance would have been unimaginable. The fact that dishes would be organized into breakfast, lunch, dinner, side dishes, and dessert selections would have been such a relief and saved so much time. The ability to involve the whole family in meal preparation and dining together with meals that looked similar to what Charlie was eating would have made dinnertime far less stressful for the whole family.
Charlies brother and sister would not have had to hide and eat behind Charlies back so that he would not see what they were eating and what he could not have. Even the notion that there was an entire community out there that was in need of this information would have chipped away at the isolation we felt with a child on the ketogenic diet. Dawns passion as Charlottes keto mom for seven years, coupled with Beth Zupec-Kania RDN, CDs expertise working with diet therapy for over 20 years worldwide, have created an invaluable tool for any keto family. Nancy and Jim Abrahams Charlies parents, Founders of The Charlie Foundation for Ketogenic Therapies Introduction In 2010, my family was introduced to the world of ketogenic diet therapies. Our five-year-old daughter, Charlotte, started a classic 4:1 ratio ketogenic diet to hopefully control the hundreds of seizures she was experiencing daily.
Charlotte was diagnosed with Dravets Syndrome when she was 21 months old, and we had tried nearly every possible antiepileptic medication available in the United States. We even tried medications purchased from Canada and France. Nothing worked. Even her rescue medications stopped working, resulting in numerous nonstop seizure episodes or status seizures. Charlotte started the ketogenic diet while an in-patient at Childrens National Medical Center in Washington, DC. She began the hospital stay having myoclonic seizures about every two to three seconds, increasing to full tonicclonic seizures by the early evening.
By the third day in the hospital her body had converted to ketosis and she was experiencing zero seizures. My husband and I held our breath, waiting for epilepsy to rear its ugly head again, but it didnt. The diet was working. Since that hospital stay, Charlotte has continued to grow and progress while on the ketogenic diet. Over the past five plus years she has gradually weaned from a 4:1 ratio to a liberal 2:1 ratio. She still experiences an occasional tonic clonic seizure, mostly when she is ill, but the ketogenic diet has given her a chance to live her life to the fullest.
In retrospect, Hippocrates sentiments captured the essence of the ketogenic diet when he said, let food be thy medicine and medicine be thy food. It has been amazing to experience Charlottes success with the dietwith food is her best medicine. Familiar and simple, was the mantra I had while selecting and creating the recipes for this book. Like many other people, we began the ketogenic diet in the midst of experiencing a health crisis. I know from experience how stressful it can be to put food on the table while your mind is preoccupied with so many other things. Over the years my family has found new favorite meals and moved toward a whole foods approach to eating.
In my time working with The Charlie Foundation, a 501(c)(3) nonprofit that advocates for ketogenic diet therapies treating epilepsy, neurological disorders, and cancers, I have spoken with many people who are on or beginning ketogenic diet therapies. Almost everyone has two things in common: they need ketogenic food and it needs to taste good enough to eat. It also helps if it can be made quickly, easily, and in bulk. Some people are not great home cooks and have relied on convenience foodsand eating out. Many people are strapped for time and find it hard to juggle making everything from scratch. Others just dont like to cook! Lots of people dont want to give up their favorite things to eat.
