I started my keto journey in February of 2017. In my early stages of online research, Jens Instagram account @KetoInTheCity_ was the very first one I found. Jen immediately captured my attention. Not only was she beautiful and confident, but her content was rich and so easy to understand. Keto can be tricky. There are a million different ways to approach a keto lifestyle, and it can become overwhelming fast.
When I found Jens account, I felt like I had finally found some guidance. Her recipes were simple, they didnt use any strange ingredients that deterred me from trying out different dishes, and she always made keto seem like something I could realistically do for life. I learned from Jen that a ketogenic diet doesnt have to be difficult or fussy, and I am still inspired by her daily. In fact, she even motivated me to start my very own keto Instagram account! I wanted to show the world that keto can be done in the most basic form, and you dont need to overcomplicate it. I learned the bedrock of the keto diet from Jen, and I am so grateful to her. I was fortunate enough to be able to meet Jen in real life in June of this year.
You would think that we wouldve done something super exciting involving delicious keto food, but nope! We sat on the couch and talked for hours about how this way of eating has completely changed us for the better. We swapped success stories, busy mom stories, and everything in between. Jen has a true passion for all things keto and is an incredibly hard worker. You can feel her love for the keto lifestyle in these recipes. I so badly wish that this book had been around when I first started my journey. This cookbook lays it all out in such a simple form.

Julie Smith, @KetoMadeSimple I started following a ketogenic lifestyle because I was searching for a way of eating that would help relieve some of the inflammation I experience from my two autoimmune disorders, psoriatic arthritis and psoriasis. I have been fighting these diseases for about 20 years, and during that time I have learned that eating an anti-inflammatory diet can be a great tool.
Food alone isnt going to save my joints from the damaging effects of psoriatic arthritis, but it is important to me that I know Im doing everything I can to complement the treatment set forth by my doctors. Weight loss was also an important motivator for me beginning keto. Over the last two years of following a ketogenic diet, I have lost 30 pounds. Some people will lose weight faster than thatsome lose 30 pounds within a few months of starting keto, as everyones body is different. What I know is that I feel so much better than I did a couple of years ago, and that is hugely important to me. As a single working mom, I need to have a ton of energy to survive the daily grind, and keto does that for me.
It also helps me sleep like a baby at night, which is so important for all of us in these sleep-deprived times. I started cooking more frequently about 10 years ago, mainly so that I could have a stress-relieving creative outlet after work. Im not a chef or a nutritionist. I am just a tired (and hungry) mom who wanted to make quick, healthy meals for my daughter and myself. Since I began cooking more, Ive come to really enjoy it. My intention with this book is to help you make cooking one of the best parts of your day, like it is with mine.
I also want to help you learn how the ketogenic diet can be an important tool in your life. Switching to a new way of eating is always a bit of an adjustment, but I promise to make it as simple (and delicious) as possible! Whether you have turned to keto for weight loss, for healing, or for both, I will show you how you can be successful using familiar flavors. I often hear people say that eating keto must be expensive or super overwhelming. I am here to tell you it is not. Keto can be easy to prepare, unfussy, and just plain yummy.
