Whole Wheat Pancakes

This specific recipe is a little healthier than the usual pancake recipe, as it doesnt require butter at all! Your pancakes will still be fluffy and scrumptious, while still leaving you feeling fulfilled and energized from the nutrition!

Ingredients:
- 1 cups of milk (alternatively you can use oat/soy milk)
- cup of white vinegar
- 2 large free-range eggs
- cup of oil
- cup of honey (golden/maple syrup is also a good substitute)
- 2 cups of whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- salt
- oil (or butter) to lightly grease your pan
Directions:
  1. Pour the vinegar and milk into a bowl and gently stir the mixture. Leave the mixture to stand for about 10 minutes it should start to curdle and become buttermilk.
  2. While you allow the mixture to stand, you can preheat your pan to a medium-high heat.
  3. Whisk the eggs, oil, honey, baking soda, baking powder, cinnamon and salt into your buttermilk mixture, making sure it is well combined.
  4. Gently sift the flour into the mixture and stir well with a spatula/wooden spoon, breaking down all the lumps.
  5. Once your pan is hot enough, lightly drizzle some oil/butter to evenly coat the surface of the pan (make sure the oil sizzles, so your pancakes can fry nicely).
  6. Using a spoon/cup, pour your mixture into the pan, creating circular shapes you can decide how big/small youd like your pancakes to be. Allow the mixture to fry for 3-4 minutes (you should start seeing bubbles appear in the mixture or browning around the circumference). Flip the pancakes and cook for another minute.
  7. Repeat the process until your batter is done remember to adjust the heat of your pan accordingly: Since the oil is now hot, it may burn your pancakes if you leave the heat on too high.
Voila! Youve made perfect, fluffy and healthy pancakes that will keep you feeling full! You can add your own touches of green yogurt, honey, berries whatever you fancy for that day! If you have any leftovers, you can always pop them in the freezer and reheat them out throughout the week!
