Chapter 1: Easy Risotto Recipes
Zesty Summer Risotto
Ingredients
- 1 medium onion , diced
- 4 tbsp butter
- lemon , zest, and juice
- 1 C. Arborio rice
- 2 C. chicken broth
- 2 C. water
- 3/4 C. grated parmesan cheese
- 2 tbsp chopped parsley
- additional parmesan cheese
Directions
- Place a large saucepan over medium heat. Heat in it the butter.
- Cook in it the lemon zest with onion for 3 min. Stir in the rice and cook them for 1 min.
- Lower the heat and stir in 1/2 C. of broth with 2 tbsp of lemon juice.
- Let them cook until the risotto becomes thick.
- Stir in 1/2 C. of broth and simmer it again until it becomes thick.
- Repeat the process with the remaining broth. When the rice is done, stir in the cheese with parsley.
- Adjust the seasoning of your risotto then serve it warm.
- Enjoy.

Pittsburgh Style Risotto
Ingredients
- 2 tbsp butter
- 2 1/2 C. fresh mushrooms , sliced
- 1 -2 pieces skinless chicken breast, chopped
- 5 1/2 C. chicken stock , heated
- 1 1/2 C. Arborio rice
- 1/2 C. dry white wine
- 1 large chopped onion
- garlic cloves, crushed
- 1 C. of grated parmesan cheese
- 1/4 C. cream
- 2 tbsp of chopped parsley
- oil
- salt & pepper
Directions
- Place a soup stew pot over medium heat. Heat in it the oil.
- Cook in it the mushrooms with chicken for 5 min. Drain them and place them aside.
- Stir the butter with onion and garlic in the same pot. Cook them for 3 min.
- Stir in the rice and cook them for 2 min. Stir in the wine with a pinch of salt and pepper.
- Cook them until the rice absorbs the wine. Stir in 1/2 C. of chicken stock. Simmer the risotto until it becomes thick.
- Repeat the process with the remaining broth until the risotto is done.
- Stir the mushroom and rice back to the pot. Cook them for 2 min.
- Stir in 1/2 C. of cheese with parsley, cream, a pinch of salt and pepper.
- Garnish your risotto with the remaining cheese then serve it hot.
- Enjoy.
