Heat the milk and butter in a small saucepan until the milk is just warm and the butter has melted.
In a separate small bowl, whisk together the pumpkin puree, vanilla, and eggs. Add this mix to the warm milk, whisking constantly.
Add the flour, sugar, ginger, nutmeg, cinnamon, salt, and baking powder to the pumpkin mix and whisk all together until a smooth batter forms.
Heat a small skillet or crepe pan over medium heat with about a teaspoon of butter.
Scoop about a fourth of a cup of crepes batter into the hot pan and tilt the pan so that the crepe batter covers the entire bottom of the pan- the crepe should be the size of the whole frying pan.
After about two minutes, the crepe should be lightly browned and ready to flip. Flip the crepe using a spatula (or try your hand at flipping it using just the pan and a flick of the wrist!).
Cook the crepe for about 30 more seconds and then fold in quarters and serve while hot.
Cook the remaining crepes, one at a time, until there is no more batter.

1 cups of all-purpose flour
1 cup of rolled oats
1 tablespoon of baking powder

2 eggs, beaten
1 cups of whole milk
6 tablespoons of butter, melted
2 tablespoons of light brown sugar
Instructions:
In a large bowl, combine all-purpose flour, rolled oats, ground cinnamon, baking powder, and a dash of salt. Stir well to mix.
Add in the beaten eggs, whole milk, melted butter, and light brown sugar in a separate bowl. Whisk until evenly mixed.
Pour egg mixture into the flour mixture. Stir well until just mixed.
Preheat a pan on medium heat. Grease with cooking spray.
Pour 1/4 cup of the batter into the pan and spread thin. Cover and cook for 2 minutes or until the crepes are golden. Repeat with the remaining crepe batter.
