Basic Crepes
Ingredients: -1 and cup all-purpose flour -4 eggs - teaspoon salt -1 cup of milk -3 - photo 2 -1 and cup all-purpose flour -4 eggs - teaspoon salt -1 cup of milk -3 tablespoons unsalted butter, melted or sunflower oil. In a large bowl mix the eggs .

Add in the milk and whisk to combine. Gradually add the flour , beating rapidly. Add the salt and butter (oil). We continue to whisk until smooth and bubbles form on top. The batter must be smoothie but viscous , if you think it is not you can add some more milk or flour . Heat a lightly oiled griddle or frying pan over medium high heat.

Pour or scoop the batter into the griddle, using approximately 1/4 cup for each crepe. Cook until underside of crepe is golden brown, 2 to 3 minutes. With a spatula, turn and cook the other side. Let another 30 seconds to 1 minute. Remove it from pan and enjoy it with whichfilling you wis h you can use jam , chocolate , cream , cheese , fruits , honey , butter and many mor e The first few crepes you make don't look good, it's because the pan isn't in "crepe mode" yet. Not enough fat yet, slightly too hot, etc.

They should still taste right, though, so you may as well eat them yourself. Enjoy your crepes!

Basic Vegan Crepes
Ingredients: -1 cup all-purpose flour -1 cup mineral water -3 tablespoons sunflower oil - photo 3 -1 cup all-purpose flour -1 cup mineral water -3 tablespoons sunflower oil -1 tablespoons sugar - teaspoon salt. In a medium bowl, whisk together flour and mineral water. You will add the water gradually, so the flour will be dissolved very well. Add salt, oil and sugar and stirring to combine. If we think the composition is not smoothie, we can add some more mineral water or flour and continue to stirring.

Kaisershmarren-Austrian Crepes
Ingredients: -3 eggs -1/3 cup flour -1 tablespoon sugar -Vanilla extract -14 teaspoon of salt -1 cup milk - photo 4 -1 tablespoon sugar -Vanilla extract -1/4 teaspoon of salt -1 cup milk -4 tablespoon butter -Raisins.
Mix in a bowl the yolks, flour, sugar, vanilla, salt and milk to a liquid, but viscous dough.

Beat the egg white until thoroughly stiff. Mix dough and egg white gently .Once the butter has melted and is hot in the pan , pour the dough into the pan and fry it like an omelet at low heat. Sprinkle raisins over the omelet. Try to turn it after a while (never mind if it breaks). Fry the other side. Then tear it into small pieces (2 and 5 centimeters) and bake it properly.

Serve it with icing sugar on top and - ideally - "Zwetschkenrster", a kind of plum chutney. Guten Apptit!!!

Crepes with Chocolate
Ingredients: -1 cup condensed Milk -3 eggs -1 and cup flour - cup hot water - - photo 5 -1 cup condensed Milk -3 eggs -1 and cup flour - cup hot water - teaspoon salt -1 big tablespoon cacao -4 tablespoon butter. In a blender whisk the milk, water, eggs and butter. Add the flour, cacao and salt, and continue to stirring to combine. The mixture must be smoothie as in Basic Crepe Recipe. The process of cooking it will be the same method as in Basic Crepe Recipe.

When the crepes are ready and hot, pipe or spoon a generous 1/3 chocolate filling (Merenda, Nutella, Finetti) into center of each crepe. Roll up each crepe. Place on serving plate and sprinkle with powdered sugar. Garnish also with some whipped cream. I always enjoy this delicious dish with a big cupof cappuccino!

Crepes with Honey and Nuts
Ingredients: -1 cup flour -3 large eggs -1 cup milk -3 tablespoon sunflower oil - photo 6 -1 cup flour -3 large eggs -1 cup milk -3 tablespoon sunflower oil -unsalted butter for frying -good drizzle of honey -4 tablespoons chopped nuts -Rum -Cinnamon powder. Tip the flour into a large bowl, crack the eggs and start whisking them in.
