Iam aware that some people may find making pancakes a very difficult task. Theycould be either tough or crumbly or can easily fall apart.

Chapter II - Dos and Donts ofMaking Perfect Pancakes: Since pancake isstill considered a cake, then you must follow the correct measurements andingredients that goes with each recipe. When mixing thebatter (dry and liquid ingredients mixture), use a large wooden spoon or largewire whisk to easily blend all the ingredients. Do not over mix thebatter! This will result to tough or chewy pancakes because the starch willdevelop more gluten in the process. Simply mix the ingredients until allingredients are just blended.

It will help preventlumps if you sift all dry ingredients before mixing it with the wetingredients. Using a griddle orheavy bottomed non-stick frying pan will save you the trouble of getting yourpancakes to burn easily and stick on the bottom of the pan. Look for bubbles!When bubbles form on the pancake surface once you put them on the hot griddleor pan, then that is your clue that they are ready to flip or you can turn it over. Do not press! Whencooking pancakes, let them raise so you will have your desired fluffy pancakes.Pressing the pancake will make them flat and undesirable to eat. Do not overcook!Remove the pancakes from heat once it is golden brown and cooked through.Prolonging the cooking time will also make them tough. Usually 2 minutes oneach side is all you need to cook them.

You can replacebutter with vegetable oil or applesauce for variation. Spraying the griddle orpan lightly with cooking oil spray will also help prevent the pancake fromsticking on the bottom of the pan. Pancakes are bestserved fresh from the griddle or while it is still warm. This will help meltthe butter should you decide to add them on top and spread before taking thatfirst bite.

Flip to cook the other side for 1 to 2 minutes or until golden andcooked through. Transfer to a plate and cover to keep warm. Repeat withremaining mixture, spraying pan with oil if necessary. 4.Divide pancakes onto 4 individual plates. Garnish with remaining mixed berries.
