Introduction
What I love about the Instant Pot is that it is a secret weapon in the kitchen for making healthy, from-scratch meals with real unprocessed food. Life can be hectic, and home cooking can often fall by the wayside in favor of going through a drive-through or relying on processed frozen food at the end of a long day. Especially when cooking for just one or two people, it can be hard to find the motivation to spend the time in the kitchen that it takes to put together healthy, nourishing meals. The Instant Pot Mini is a wonderful tool to coax busy people back into the kitchen and help them streamline the cooking process, saving time and energy. I have seen first hand the Instant Pot Mini bring real food cooking back into the realm of possibility for so many people, from busy working parents, to the disabled and the elderly.
I began cooking with an Instant Pot when they first came on the market, and I quickly realized that this appliance would transform my cooking like no other piece of kitchen equipment had up to that point! It not only cooked up scrumptious meals ultrafast (while tasting like I had slaved all day in the kitchen!), the cooking time was so hands off that I was able to fix it and forget it and ended up enjoying lots of extra time. While dinner cooked, I could catch up on chores, play with my kids, or even run errands. Beans, which I used to have to remember to soak overnight, cook from dry to perfection within about 30 minutes in the Instant Pot; tough cuts of meat, which I used to have to tend to for the better part of the day, cook down to fall-apart tender within an hour or two. I am so grateful to have discovered the Instant Pot and am continuing to enjoy all of the benefits that it offers in my kitchen.
This book contains 100 recipes filled with nourishing, whole foods that are all perfectly scaled for the Instant Pot Mini. While developing these recipes, I took care to consider those who are on dietary programs (keto and vegan) and made sure to offer different substitutions to make these recipes work for you and your specific needs. So whether youre new to Instant Pot cooking or an old pro, my hope is that in this book you will find inspiration and motivation to get back into the kitchen, to cook with real foods from scratch, and to experience the joy and vibrancy that comes along with it.

Introducing the Instant Pot Mini
The Instant Pot Mini provides all of the features of the original Instant Pot, but its shrunken down into a sleek and compact 3-quart size. Its considered a multicooker, which means it replaces many different kitchen appliances, including a slow cooker, rice maker, yogurt maker, and, of course, a stovetop pressure cooker.
Perfect for One or Two
The 3-quart Instant Pot is a great option for those cooking for just one or two people, as well as anyone with limited counter space or kitchen storage. Three quarts is the perfect size to make just two servings so youre not left with more leftovers than you can manage! Most of the recipes in this book yield two servings, and in most instances theyre easy to , if preferred.
