Pesto Shrimp with Pasta
Cook Time: 25 minutes
Servings Size: 4
Recipes:
8 oz. spaghetti
2 minced garlic cloves
Salt to taste
1 tbsp. olive oil
8 oz. asparagus
1 cup sliced white mushrooms
pound peeled and deveined shrimp
tsp. red pepper
cup pesto or prepare your own
2 tbsp. grated parmesan cheese
Instructions:
Place the spaghetti in a pot of boiling salted water and cook for 10 minutes.
Drain the spaghetti but keep some of the pasta water aside.
Heat the olive oil in a skillet.
Saut the garlic, asparagus and mushrooms for 5 minutes or until they are tender.
Add the shrimp to the skillet and season with red pepper
Cook for 5 minutes.
If liquid is needed, add a few tablespoons of pasta water.
Combine the pesto sauce and the parmesan cheese.
Stir the pesto into the shrimp.
Cook for 5 minutes
Serve over the spaghetti.
Hungarian Goulash
Cook Time: 40 minutes
Servings Size: 6
Recipes:
1 tbsp. olive oil
2 lbs. ground beef
2 chopped onions
3 minced garlic cloves
1 tbsp. sweet paprika
Salt and pepper to taste
2 tbsp. Worcestershire sauce
2 cups canned diced tomatoes with juices
cup red wine
1 tsp. sugar
tsp. chili powder
cup beef broth
2 cups cooked egg noodles
Instructions:
Heat the olive oil in a skillet.
Brown the beef, onion, and garlic for 5 minutes.
Stir in the paprika, pepper and salt.
Add the Worcestershire sauce, diced tomatoes with juices, red wine, sugar, chili powder, and beef broth.
Combine well and bring the liquid to a boil.
Simmer uncovered for 35 minutes.
Check for desired thickness and add more liquid if needed.
Serve over the egg noodles.
Lobster Mac and Cheese
Cook Time: 30 minutes
Servings Size: 2
Recipes:
1 tbsp. olive oil
3 lobster tails, split in half lengthwise and deveined
3 tbsp. butter
2 tbsp. flour
1 cups half and half
cup milk
tsp. paprika
tsp. chili powder
Salt to taste
tsp. Worcestershire sauce
cup grated Cheddar cheese
3 tbsp, grated Gruyere cheese
1 cup prepared elbow macaroni
cup Panko breadcrumbs
cup melted butter
5 tbsp. grated Parmesan cheese
Instructions:
Preheat the oven to 400 degrees.
Coat two gratin dishes with non-stick spray
Heat the oil in a skillet and brown the lobster tails for 2 minutes on medium heat.
Let the lobsters cool and separate the meat from the shells.
Chop the meat and discard the shells.
Use the same skillet to melt the butter.
Create a roux by stirring in the flour and continue stirring for 1 minute.
Pour in the half and half and milk and continue stirring for 3 minutes.
Let the liquid simmer and add the paprika, chili powder, salt, and Worcestershire Sauce.
Let simmer for 4 minutes.
Add the cheddar and Gruyere cheeses and stir for 5 minutes, until the cheese is melted.
Add the macaroni to the cheese sauce and gently stir in the lobster chunks.
Fill both gratin dishes with the mac and cheese mixture.
Combine the Panko, melted butter, and parmesan cheese in a bowl.
Drizzle the mixture over the mac and cheese.
Bake the mac and cheese for 15 minutes.
Bolognese Sauce
Cook Time: 1 hour 10 minutes
Servings. 10
1 tbsp. olive oil
3 oz. cut-up pancetta
1 chopped onion
2 minced garlic cloves
1 cup sliced mushrooms
2 shredded carrots
2 chopped celery stalks
1 lb. ground beef
lb. ground pork
28 oz. crushed canned tomatoes
6 oz. tomato paste
cup dry white wine
cup chicken stock
cup milk
1 tsp. Italian seasoning or to taste
Salt and pepper to taste
cup grated Pecorino Romano
1 lb. prepared pasta
Instructions:
Heat the oil in a large skillet and saut the pancetta, onion, and garlic for 5 minutes.
Use the skillet the brown both meats for 5 minutes.
Drain off any fat.
Add the pancetta mixture back to the skillet and stir in the beef and pork.
Stir in the remaining ingredients and combine well.
Cover the skillet and simmer for 1 hour while frequently stirring.
Serve over the cooked pasta.
BLT Pasta Salad
Cook Time: 20 minutes
Servings Size: 6
Recipes:
2 cups elbow macaroni
1 cups mayonnaise
2 tbsp. balsamic vinegar
1 cup halved cherry tomatoes
cup chopped red bell pepper
3 tbsp. chopped scallions
cup shredded Cheddar cheese
Salt and pepper to taste
tsp. dill
10 bacon slices
8 oz. chopped romaine lettuce
Instructions:
Cook the macaroni in a pot of salted water for 10 minutes. Drain and transfer to a salad bowl.
