HOW DOES IT WORK?
In a nutshell, the Instant Pot cuts cooking to a
fraction of the time, making long-simmering dishes
at record speed. When pressure cooking, the
tightly sealed pot boils liquid quickly, then traps the
steam and generates pressure. With this method,
heat is evenly, deeply, and quickly distributed.
Like pressure cooking, air frying (using the
Instant Pot Duo Crisp or the stand-alone Instant
Pot Air Fryer Lid) helps you save time and cook
healthy mealsThe air fryer lid relies on very hot,
fast-blowing air to cook and crisp food, similar to
the way a convection oven works. You can use it
to cook food from fresh or frozen, or to crisp up a
dish after its been cooked on a pressure-cooking
setting. Compared to a full-size oven, the Air
Fryer Lid is also a fast, easy, and energy-efficient
way to reheat and recrisp leftovers.
The recipes in this book were developed and
tested using the Duo Plus and Duo Crisp
6-Quart Instant Pot. If youve just purchased an
Instant Pot, read the user manual first to get
comfortable with your models specific parts,
buttons, settings, and indicator lights. Here are
some key points to know before you start.
FUNCTIONS & SETTINGS
Both lids correspond to their own set of smart
programs. With the pressure cooking lid, you can
use the smart programs to saut, pressure cook,
slow cook, steam, and sous vide. With the air fryer
lid, you can air fry, roast, bake, broil, and dehydrate.
Saut: This function allows you to sear meat
before pressure cooking or after sous vide
cooking, simmer stock, reduce liquid, and more,
similar to how you use a saut pan on the
stovetop. It has three modes: Less is ideal for
cooking bacon or other foods that might stick;
Normal is best for simmering, thickening, and
reducing liquids; and More is handy for browning
meat. The timer automatically sets for 30 minutes,
but when you need it on for longer than that,
press the Saut button after it shuts off and
continue cooking. Never put the locking lid on
while using this function.
Pressure Cook: There are two levels for pressure
cooking, Hi and Lo. Most recipes call for the Hi
setting. The Lo setting can be used for delicate
foods like fish or eggs. Press the Pressure Level
key or Adjust key (depending on your model)
to adjust pressure levels, and the + and - keys to
change the cooking time.
Slow Cook: This is a nonpressure cooking
program, where the Less, Normal, and High modes
correspond to the low, medium, and high settings
of temperature-controlled slow cookers. It works
similarly to a traditional slow cooker, cooking food
slowly with more liquid than required for pressure
cooking. Use this function to prepare your favorite
slow-cooker recipes.
Steam: For this program, always use the steam
rack that came with the pot or a metal or silicone
steam basket. The food can scorch if its not raised
off the bottom of the pot.
