INTRODUCTION
The Air Frying Revolution
Throughout time, a central contradiction has plagued the common home cook: the more butter, oil, and grease you add to most any dish, the more delicious it will tasteand the unhealthier it will be. Thats due mainly to simple chemistry. Oil is a highly efficient conductor of heat, which means that it can quickly heat foods uniformly across their surface areas. That fast all over cooking is what achieves the golden brown outer crunch that makes fried food so delicious. But without using high quantities of artery clogging oil, chefs simply had no tools to achieve the same effect.
For those of us who want food to nourish our bodies as well as our flavor palates, this is less than ideal. Ive spent years trying to strike the optimal trade off in my recipes between taste and nutrition. Like most cooks, Ive also spent more dollars than I care to recount on various brands of convection oven and other gadgets, in an effort to achieve the all-over heat circulation that makes deep fried foods so tasty. None of them worked well enough. Then, along came the air fryer and everything changed.
Im not exaggerating when I say the advent of air frying has literally changed my life. This new technology, introduced by Philips in 2010, uses a patented rapid air circulation innovation that delivers intense, high, allover heat to the entire surface of food. The rate of hot air circulation in the air fryer blows away speeds previously achieved with convection ovens. Philips effectively invented a mechanism by which air conducts heat as efficiently as oilwithout the oil. The result has been nothing less than a revolution in cooking. This represents a change in the way we think of food that can rightfully be deemed healthy. This book is my own personal celebration of that revolution, as its played out in my kitchen since I first brought home my own Philips AirFryer.
Care for some crispy breaded and seasoned chicken tenders, without a drop of oil? No problem! How about some crunchy fried bacon, cooked in nothing but its own natural goodness? Of course, sometimes a touch of butter or oil is still called for in a recipe, but for flavor rather than crispiness. My Basil, Tomato and Mozzarella Bruschetta recipe for instance, (under the Appetizers section) would still crisp perfectly in the air fryer without the touch of extra virgin olive oil called for in the recipe, but it would lack the rich savory essence of the olive.
The air fryer is the best thing to ever happen to my kitchen and to the nutrition of my friends, family, and dinner party guests. If youve recently joined me in the happy air fryer owners club, consider the following recipes my welcome gift to our elite bunch. Air frying is the culinary way of the future and its right here, right now. How great is that?
Using This Book:
The following recipes are arranged roughly by meal categories and food type, which should allow cooks to quickly find the sort of dish theyre looking for. In each recipe, youll find full preparation and cooking instructions, and serving notes. These recipes need not be read in any order, so go ahead and jump around as your mood suits.
As noted in each of the recipes, cooks should be sure to use protective equipment such as tongs, spatulas, and oven mitts where appropriate in handling the hot air fryer and the dishes coming in or out of it. In all cases, make sure to fully read the safety instructions and user manuals that come with any kitchen appliance, to ensure correct usage, safety specifications, and so forth.
Always place foods and baking dishes in the basket of the air fryer, as directed in each of these recipes. Do not place cooking food or dishes directly on the air fryer surface, since that would prevent the air from circulating fully around the food. Also, always ensure that any baking dishes or tins used inside the air fryer are oven safe, and that they leave enough room inside the air fryer to allow for full airflow.
In some cases, recipes in this book will call for additional preparation using other cooking methods, such as stovetop sauting or boiling. However, cooks should never attempt to substitute any cooking method for air frying in these recipes; where the instructions call for air frying, do not use an alternative cooking method, because the timing, temperature and measurements will be off. The recipes in this book have all been developed and tested specifically for air frying, and the results would be unpredictable at best with other cooking methods.
All the recipes in this book give temperature directions for Fahrenheit appliances, so if youve got a Celsius appliance, make certain to convert appropriately while following the instructions.
Choosing an Air fryer: The Philips HD9220/26 vs. Everything Else
Philips is the first, the best, and in my opinion, the only true air fryer on the market. The innovative oil free air frying method simply did not exist until Philips introduced its patented rapid air technology, so its little surprise that Philips would still be leading the pack by far. Since Philips released the original HD9220/26 air fryer in 2010, several other brands and manufacturers have jumped into the market with devices claiming to imitate the method. But none of these copycat products, in my opinion, come close to matching the quality, durability, effectiveness and ease of use that comes with the Philips model.
