INTRODUCTION
Here in the Deep South, we grew up eating fried everything at every meal.
From fried grits for breakfast to fried apple pies for a late-night snack, all our favorite foods were boiled in oil. Our taste buds lived in a grease-happy heaven. Too bad that blissful ignorance couldnt last. As adults, we quickly learned better and grudgingly gave up deep-fried taste for better health. Then along came the air fryer, an odd-looking appliance promising to produce deep-fried taste without all the grease. We were skeptical.
It sounded too good to be true, and you know how that usually works out. Well, we were in for a shock. Our first attempt resulted in absolutely delicious chicken and French fries. Plus, cleanup was a snap: no more messy grease spatter all over the range and countertop. In no time at all, we were converted. Once you cook a few basic foods, youll immediately start wondering what else you can do with your air fryerand frying with little to no oil is only the beginning.
You can use your air fryer to roast, grill, steam, and bake as well. Roasted meats cook faster and taste tender and juicy. Try cooking a pork loin (). The air fryer has become our go-to kitchen gadget. Its fast and convenient, doesnt make a big mess, and is super easy to clean. It works well for a wide range of dishes, from simple to complex, and its handy for little tasks, such as sauting a few onions or even, yes, cooking a piece of toast.
Weve had great fun developing the recipes for this cookbookall of them tested one or more times in a home kitchenwhich includes everything from easy basics to full meals. Whether youre brand-new to air frying or ready to expand your horizons, we want to welcome you into our kitchen. Come on in and sit awhile. Youll be delighted to discover just how versatile air fryers can be. Eliminating deep-fried foods is certainly important, but were concerned about additives, contaminants, and the food supply in general. We want food cooked in a kitchen, not a chemistry lab.
Even so, were pragmatists. In a perfect world, we always would cook from scratch, but spending hours every day on meal prep isnt realistic for most people, including us. So we strive for progress rather than perfection. For the most part, we avoid fast food and prepackaged foods. We believe in clean eating, and we buy locally grown produce and other foods whenever possible. If you can do that 100 percent of the time, you have our sincere admiration.
If not, youll know that, like ours, sometimes your soul cries out for comfort food, and, healthy or not, it sure makes you feel better. We also admit to having a sweet tooth, as evidenced by our dessert recipes ). Some are light on sugar and other evils; others are guilty pleasures. The good news is that air fryers arent large enough to handle a twelve-inch pie or three-layer cake. Air fryer desserts give you portion control by default. Homemade is healthier because you control what goes into your food.
You can avoid overprocessed ingredients, GMOs, chemicals, and additivesor you can limit the amounts you consume. That isnt perfect, but its definitely an improvement!
TIPS FOR AIR FRYER SUCCESS
Know Your Appliance
First, and most important,
read your appliance manual. All air fryers are not created equal. Features differ among models. Even timers work differently. Parts of some air fryers may be dishwasher safe, but you may have to hand-wash others.
Any misuse of your air fryer or its parts could void the warranty. Read all safety information, and never use the machine in any way that violates the manufacturers instructions for safe use. In addition to keeping you safe, your manual should provide details about your models features and functions. Most of us hate reading instructions or manuals, but its worth taking the time to understand how to use it. Sometimes that can make all the difference between frustration and success.
Cooking Time
Many factors can affect cooking times, including size, volume, and temperature of food, thickness of breading, and so on. Even your local humidity levels can affect required cooking times.
Wattage is another factor. All recipes in this cookbook were tested in 1,425-watt air fryers. A unit with a higher or lower wattage may cook somewhat faster or slower. For most recipes, total cooking time shouldnt vary by more than a minute or two, but to avoid overcooking, check food early and often. Always start with the shortest cooking time listed in a recipe. Check for doneness at that point and continue cooking if necessary.
When you try a recipe for the first time and the minimum cooking time is, say, 20 minutes or longer, check the dish at about 15 minutes just to be safe. If youre new to air frying, dont be afraid to pause your air fryer often to open the drawer and check foods. Thats the best way to save dinner before it overcooks or burns.
Minimum Temperatures for Food Safety
Consuming raw or undercooked eggs, fish, game, meats, poultry, seafood, or shellfish may increase your risk of foodborne illness. To ensure that foods are safe to eat, ground beef, lamb, pork, and veal should be cooked to a minimum of 160F. Other cuts of these meats such as beef steaks should be cooked to at least 145F.
All turkey and chicken should be cooked to a minimum of 165F. Minimum safe temperatures for fish and seafood can vary, and you can find complete information about these foods and more at https://www.foodsafety.gov/keep/charts/mintemp.html.
Cooking in Batches
For best results, always cut foods into uniform pieces so they cook more evenly. Follow recipes to know whether foods can be stacked or must cook in a single layer. Directions will indicate whether you need to turn or shake the basket to redistribute foods during cooking. All recipes developed for this cookbook were tested in air fryers with an interior capacity of approximately 3 quarts.
Using these standard-size air fryers often requires cooking in two batches, but many foods cook so quickly that this additional cooking time doesnt matter. For foods that require lengthy cooking time, the first batch may cool too much while the second batch is cooking, but the solution is simple. Air fryers do an excellent job of reheating foods. Right before your second batch finishes cooking, place your first batch on top so it reheats for serving. If theres not enough room in your air fryer basket, wait until the second batch is done, remove it, and reheat the first batch for a minute or two. Keep this strategy in mind any time you need to heat up leftovers.
