Lent
For many people, the period before Easter, Lent, is meat-less Friday time. Fortunately, it leaves an abundance of tasty fish recipes from which to choose.
1. Tuna Burger
Serve this burger with tomatoes and lettuce. It is quite delicious.
Cooking Time: 6 minutes
Servings: 4
Ingredients:
2 5-oz. cans drained tuna
2 tbsp. chopped onion
2 chopped celery stalks
1 cup panko breadcrumbs
1/8 tsp. garlic powder
tsp. mustard or more to taste
Salt and pepper to taste
3 tbsp. mayonnaise or more if needed
2 tbsp. olive oil
Bun with lettuce and tomatoes for serving
Directions:
Flake the tuna and combine all the ingredients except the olive oil in a bowl.
If the mixture is too dry, add 1 tbsp. of mayonnaise more.
Divide the tuna into 4 patties.
Heat the olive oil in a skillet.
Fry the patties for 3 minutes on each side.
Drain them on a paper towel.
Serve on a bun with lettuce and tomatoes.
2. Beer Batter Fish Fillets
This is a genuine treat allowed during Lent. No need to give up on your favorite food.
Cooking Time: 5 minutes

Ingredients:

Combine all the ingredients except the cod fillets and canola oil in a bowl.
Add the fillets to the batter and coat them well.
Let them sit for 30 minutes.
Heat the canola oil in the deep fryer to 375 degrees F.
Add the coated fillets.
Fry the fillets for 5 minutes or until they are golden brown.
3. Fish Tacos
These are wonderful tacos.
Cooking Time: 2 minutes

Combine the Guinness beer, flour, salt, pepper and garlic powder in a bowl.
Make sure the haddock fillets are dry, then cube them into 10 bite-sized pieces.
Heat the canola oil in a large skillet.
Coat the haddock pieces in the batter and place them in the hot oil.
Fry the pieces for about 2 minutes.
Drain them on a paper towel.
Combine the cabbage and mayonnaise with the onion, tomato and jalapeno pepper.
To each corn tortilla, add one haddock piece and some of the mixture.
Serve with the lime slices.
4. Cioppino
This is San Franciscos own great fish stew. Serve with sliced crusty bread.
Cooking Time: 1 hour 8 minutes

Ingredients:
3 tbsp. olive oil
2 chopped onions
4 diced garlic cloves
cup chopped parsley
28 oz. stewed tomatoes
1 cup tomato sauce
2 cups fish broth
2 bay leaves
2 tsp. dried basil
1 tsp. oregano
tsp. red pepper flakes
cup clam juice
1 cups red wine
2 lb. peeled and deveined shrimp
1lb. bay scallops
1 cup frozen calamari
18 cleaned and debearded mussels
lb. chopped fresh crabmeat
1lb. bite-sized tilapia
