Ingredients: 3 Tbsp. dark brown sugar, divided 2 Tbsp. all-purpose flour 2 Tbsp. butter, softened, divided A pinch plus 1/4 teaspoon ground cinnamon (divided) A pinch salt, optional 1/2 egg (from 1 egg lightly beaten and divided) 2 tablespoons sour cream 1 teaspoon maple syrup 2 drops Vanilla extract 1/4 cup self-rising flour Directions: To make the topping: combine 2 tbsp of brown sugar, all-purpose flour, 1 tbsp butter, a pinch of cinnamon and salt in a small bowl. Pinch together until crumbs form.

To make the batter: mix the remaining 1 tbsp butter and the remaining 1 tbsp brown sugar together in a large measuring cup until creamy. Add egg, sour cream, syrup and vanilla. Beat until well mixed. Add self-rising flour and the remaining 1/4 teaspoon cinnamon, whisk until smooth. Pour batter into mug. Sprinkle with crumb topping.

Microwave on high until done, about 1 minute 15 seconds.

Sweet Potato Hash
Ingredients: 1 cup small sweet potato Cold Water, enough to cover the potatoes 2 peppers (chopped) 1 Tbsp. red onion (chopped) 2 Tbsp. shredded cheese A pinch of salt and pepper 2 tsp. rosemary (fresh or dried) 1/4 Tbsp. Butter Directions: Peel and chop small cubes of sweet potato.

Add into a mug and cover totally with cold water. Cook for 3-4 minutes in the microwave until it is tender. It will turn an orange color when done, stir every so often. Drain off the water and add in the peppers, onion, cheese, butter, rosemary, salt and pepper and mix well. Ingredients: 1/3 cup pasta 1/2 cup water 1/4 cup milk 1/2 cup shredded cheddar cheese Directions: Combine the pasta and water in a mug. Microwave on high for two minutes, then stir. Repeat this for at least 2 to 4 more minutes, stirring at each 2-minute interval cook until al-dente adding more water if needed. Remove from the microwave, drain excess water and stir in the milk and cheese. Microwave for another minute.

Stir the cheese thoroughly into the pasta and let cool for 1-2 minutes then serve!
