Ingredients:
- 2 tbsp. cream cheese
- 2 tbsp. powdered sugar
- 2 tbsp. sour cream
- 1 tbsp. lemon juice
- 1 egg, beaten
- 2 tbsp. graham cracker crumbs
- 3 tbsp. melted butter
Instructions:
1. Spray the inside of a small microwave-safe quiche dish with cooking spray.
2. Combine the melted butter with the graham cracker crumbs and press into the bottom of your quiche dish.
3. Whisk together the cream cheese, powdered sugar, sour cream and egg in a small bowl until smooth.
4. Stir in the lemon juice then spoon the mixture into the quiche dish.
5. Microwave on medium for 1 minutes. Microwave longer, if necessary, at 15 second increments on medium power. The center should be slightly wobbly when done.
6. Chill the cheesecake for a few hours in the refrigerator then serve with fresh berries and cream.
Chocolate Covered Banana Slices
This recipe may be simple but it is a timeless classic - for some reason, the combination of chocolate and banana is sometimes just what you need. Dont be afraid to get creative with this recipe! After drizzling the chocolate over your banana slices try sprinkling on some crushed nuts or, if you have a sweet tooth, some marshmallows or extra chocolate chips. 1. Place the chocolate chips in a small microwave-safe bowl and drizzle with oil. Microwave on high at 15 second intervals until melted. Stir until smooth.
2. Arrange the banana slices on a small plate and drizzle the melted chocolate over top.
3. Garnish with whipped cream or nonfat vanilla yogurt, if desired.

This simple recipe cuts the traditional prep time for baked apples in half by utilizing the microwave instead of the oven. Ingredients:
- 2 apples, cored
- 2 tbsp. brown sugar

- 1 tbsp. butter
Instructions:
1. Combine the brown sugar, cinnamon and nutmeg in a small bowl.
2. Spoon the sugar mixture into the center of each apple. The apples should be cored so as to remove the seeds but the bottom should remain intact.
3. Place a teaspoon or so of butter on top of each apple.
4. Lightly spray a small casserole dish with cooking spray.
5. Place the apples inside the dish and cover them with the lid.
6. Microwave on high power for 3 to 4 minutes or until the apples are tender.
7. Let the apples sit for a few minutes then serve with vanilla ice cream.
Chocolate Fondue
