THE INSTANT POT IS UNLIKE CONVENTIONAL PRESSURE COOKERS that require you to pay close attention to the pressure strength, heat intensity, and the amount of time each recipe requires, and can even be unsafe.
Avoid the confusion, stress, and dangers of these old methods, and use the latest in cooking technology to cook up tasty treats and savory snacks with ease! All recipes in this book use the Manual cook function. Theres no need to worry about whether to press a poultry button or a meat button when you can just key in the cook time. The step-by-step guide below follows the key functions of the Instant Pot, but you can use just about any pressure cooking multi-cooker. Take a quick look at your user manual for guidance, and use the Pressure Time provided in the recipes to set the cook time. These pressure cooking recipes for multi-cookers are no-brainers that taste delicious, period! With a multi-cooker like the Instant Pot, just follow these steps to cook each meal:
Before Cooking
Keep the lid, sealing ring, and float valve clean. Wipe them down before cooking if they are dirty.
Make sure the steam release is clean and pointing toward the ceiling. Fill the pot with the ingredients, as indicated in the recipe. Place the pot in the base. Cover the pot with the lid, turning it clockwise into the locked position. Plug in the multi-cooker.
Pressure Time
Press the Manual setting within 10 seconds of locking the lid.
Press + or - keys to select the Pressure Time, as indicated in the recipe. Thats it! Just let it cook!
Depressurization: Release Pressure Naturally
When the pressure time is complete, the multi-cooker will beep and it will automatically switch to Keep Warm/Cancel mode. This will trigger the pot to depressurize naturally, which may take 10-20 minutes, depending on the contents. (Allow up to 30 minutes for contents that started off frozen.) You can cover the handle with a cold, wet towel to speed up this process.
Quick-Release
With a kitchen towel or an oven-mitt, carefully turn the steam release to the left or right venting positions. Use caution and keep your hands, face, and body away from the steam as it releases.
As a safety function, the Instant Pot lid will stay locked until the pressure has fully released.
Saut/Browning Function
If the recipe calls for sauting, follow the steps below using your multi-cooker. If your multi-cooker does not have a saut function, please refer to the devices instruction manual for sauting. Alternatively, you can saut or brown the ingredients on the stove prior to using the multi-cooker. Follow the Before Cooking steps. Press the Saut key.
Press the Adjust key and select Normal (medium heat), unless otherwise indicated. Begin cooking when the multi-cooker says Hot. Saut or brown the contents, as indicated in the recipe.
SPECIAL NOTES FOR SAUTING
Do not use the lid when using the saut function, as this can cause pressure to build up. (For many multi-cookers, this function will not work if the lid is locked). If you do want to use a lid, set a glass lid slightly askew on top of the pot so that steam can release.
When hitting the Saut button, the multi-cooker will automatically show 30 minutes. This is a safety function so that if left unattended, the multi-cooker will automatically turn off after a half an hour
A Few More Things to Know About the Instant Pot Multi-Cooker
Say farewell to fussing with all those function buttons! All recipes in this book use the Manual function. There is a 10 second window to make adjustments when you select a setting on the multi-cooker. Once youve entered a pressure/cook timeforget about it! The rest is automatic. You will hear a beep within 10 seconds of setting the time, and it will say On to indicate the pre-heat mode. Pre-heating can take up to 10-30 minutes if the contents are frozen.
Once the pot is up to pressure, steam will come out of the float valve or steam release handle. This can take anywhere from 30 seconds to 2 minutes for this process to finish. When its ready, the float valve will pop up and seal itself and the steam will stop. After the float valve has sealed the pot, the cook time or Pressure Time will begin. Small traces of steam may come out during the cooking process. Traditional stovetop pressure cookers are 15 PSI.
The Instant Pot is between 10.15 PSI and 11.6 PSI. When cooking with classic stove top recipes, you would need to add 7%-15% to the cook time. With the recipes in this book, no time adjustments are needed!
