Indian Spiced Pistachio Ice Cream
Delicious delicate and smooth with rich spices makes this a beautiful dessert in hot summer months
Cook time 6 hours + freezing
Serves 8
Ingredients
Method
In a thick saucepan, bring the milk to boil, stirring constantly
Add the saffron until the color washes out
Next, remove from heat. Whisk in the sugar and cardamom
Cool to room temperature and stir in the pistachio
Then, gradually pour the mixture into an ice cream machine or freeze until it is set
Serve with extra pistachio
Stir-fry Green Papaya Salad
If you are not actually a fan of green papaya, substitute it for cabbage, beet, lettuce, or even spinach. However, papaya brings a rich but subtle flavor to this recipe.
Cook time 15 minutes

In a saucepan, add the curry leaves and spice seeds until it starts to burst open
Add the shallot, chili, garlic, and black pepper
Add the papaya and coconut shreds, salt, turmeric and stir to cook for 60 seconds or more

Garlicky Paratha
Parathas are known for their fluffy circular shapes. Enjoy with the leftover stew in the fridge alone or with friends.
Cook time 25 minutes

Ingredients
390g Maida flour
1 tbsp ghee
1 tbsp yogurt
1 tsp minced garlic
tsp salt
2 cups warm water
Method
Whisk garlic, water, garlic, and ghee in the mixer
Add the water mixture to the flour until a dough is formed
Roll into Parathas and cook in a non-stick pan
Serve hot
Creamy Masala Chai Tea
Take a break from your regular coffee for something intense, rich, and smooth. This is best enjoyed during winter.
Prep time 5 -7 minutes

Ingredients
1 piece long cinnamon stick
1/8 tsp white peppercorn
tsp fennel seeds
2 cups coconut milk
tsp ginger powder
2 tbsp sweetener of choice
500ml water
2 tbsp tea of choice (herbal is preferred)
Method
In a mortar, crush the cinnamon, peppercorn, and fennel seeds
In a saucepan, heat the milk and whisk the sweetener, spices, and ginger
Boil the tea in the water for 5 minutes; strain the tea in the milk mixture
Strain the mixture into four cups and enjoy
Fluffy Coconut Baath Cake
Its sweet, crumbly, fluffy, and super light. It is healthy too.
Cook time 3 hours

Grease and line 8 square pan
Beat sugar, coconut oil, and 8 tbsp butter until fluffy; add the eggs one by one until smooth
Mix the semolina with the baking powder in a bowl
In another bowl, mix the milk and cream together
Alternating wet and dry, add the ingredients into the butter mix while on low speed
