Serving size: 9
Cooking time: 30 minutes
Ingredients:
Granulated sugar (1 cup and 2 tablespoons)
Almond extract ( teaspoon)
Flour (1 cup)
Cinnamon (1 teaspoon)
Unsalted, melted butter ( cup)
Allspice ( teaspoon)
Eggs (2, large)
Salt ( teaspoon)
Fresh cranberries (2 cups)
Vanilla extract (1 teaspoon)
Instructions:
First, preheat the oven at 350F. Meanwhile, take a 9-inch round pie dish and spray it well with some cooking spray. Set it aside. In a large sized bowl, add sugar (1 cup), cinnamon, flour, allspice and salt. Whisk together all ingredients until combined and set aside.
In a medium sized microwave-safe bowl, put some butter and heat. Melt it on high power for at least 45 seconds. After a minute, add the eggs and make sure not to scramble them. Add the extracts and eggs. Whisk to combine.
Over the dry mixture, you have to pour the wet one and stir until both have combined. Make sure not to overmix. Add cranberries (2 cups) and stir until the batter gets thick. Transfer the mixture into a pie dish and smooth out the tip using a spatula.
Sprinkle the remaining cranberries on top and top with sugar (2 tablespoons). Bake for approximately 34-38 minutes. Make sure that the edges are set, and when you insert a toothpick right down the center, it comes out clean. Undertake the pie slightly if you want a gooey center.
Let the pie cool down on a wire rack before you slice it.
Top it with a scoop of ice cream and some whipped cream and serve.
