Veganism is both a diet and a lifestyle choice. Its about avoiding the consumption of animal and animal products in any way, shape or form. It has a lot in common with vegetarianism. Like that diet, it means no meat. Unlike that diet it also means no milk and no eggs. As for lifestyle veganism means not using or having any animal products in your clothes, accessories or house. So you wouldnt use leather, wool or any other animal-related products. Also, vegans dont use any pharmaceutical and cosmetic items that were tested on animals.

Yes, the implications of that are far reaching. To follow a vegan lifestyle, even if its not all the way, is a life altering decision. There is no doubting that. Still, it has become clear over the last years that we cannot go on like this if we want to avoid leaving our children a legacy of devastation.

Weve got to reduce our footprint. Veganism certainly does that. Studies reveal that a vegan diet uses only 60% of the carbon of the average Americans diet. That drops to 45% in comparison to a meat lovers diet. Eighteen percent of the world-wide CO2 emissions come from farming. So if everybody became vegan our worlds CO2 production would drop by an astounding 9%. And thats without driving, flying or shopping an inch less.

It is simply the ethical thing to do. Whats more, as will be explained below, it is the better choice for your body as well.

Veganism sounds intimidating. It shouldnt. It isnt half as bad as its made out to be.

First of all, its nothing like you think it is. It is not a cult. It is not a group of ascetics that are trying to deprive themselves of all pleasure. Nor it is a bunch of new-age flagellants punishing themselves for the worlds sins. Yes, some see it as a religion, but there are extremists in every group. At its core, veganism is nothing more than a lifestyle choice. It focuses on making us live respectfully and in harmony with the world and ourselves. Nothing more, nothing less.

And yes, in decades past being vegan was hard. It took a great deal of self-discipline as you were depriving yourself of a lot of textures and flavors. These days, as the recipes in this book demonstrate, it is a lot easier. Science and culinary experimentation have created many products that can replace animal products. There are numerous vegan products available in most western countries. Thankfully, companies have also taken to labeling in vegan-friendly manners. That certainly helps!

Whats more, you dont have to go vegan all at once. Veganism isnt an on off switch. Its more of a journey. It is fine to come to it gradually, one meal at a time. If you want, start with trying to stick to it once or twice a week and scale up from there. Every so often you'll back slide. Thats alright. As long as the road continues onward and upward, you have nothing to be ashamed of. After all, by embarking on this adventure youre already doing more than most.

There are five pounds of undigested red meat in the average Americans gut.

The digestive system was not built for this and cant cope with this much meat. The meat actually begins to break down and decay. This causes the release of high amounts of nitrogen and other nasty chemical enzymes.

Whats more, if this was all natural meat that would be one thing. But it isnt. Almost all meat we consume nowadays has been injected full of growth hormones, antibiotics and steroids. Whats more, the fodder the slaughter animals eat is full of pesticides, which collect in their meat tissue. And when we eat meat, all these things collect in us, where they compromise our immune system and degrade our health.

Plant-based foods, in the meantime, are less complex and are thus easier for our bodies to digest. This means that we have a much easier time getting at the nutrition stored in these types of food. With these essential minerals, nutrients and enzymes in our system we end up healthier and happier. This we call the bioavailability of nutrients.

When we eat a plant-based diet, we strain our human grown hormones less, we end up with more stable sleep cycles, our immune systems become healthier and we recover quicker from exercise. That sounds pretty good, right?

Whats So Bad about Dairy Anyway?

One of the main reasons why many people move beyond dairy is because of the effects that it has on their bodies. You might have heard how dairy, because of the fat content, promotes weight gain and colds. That is far from the whole story, though. There is a high correlation between dairy consumption and health concerns.

For example, as milk is high in fats consuming them means we spend a high amount of our metabolic energy processing them. This leads to weight gain and means that that energy is not available for muscle building.

Also, as mentioned, modern farm animals consume large amounts of medicine, steroids and hormones. These also end up concentrated in the milk and dairy produced by those animals. Then when we consume that dairy they end up in us. There they have the same negative health impact as they do in the animals meat.

And finally, milk proteins from other animals are not the same as those produced by a human mother. This leads to digestive track inflammation. You might have felt this. It's that bloated feeling you get after having had too much chocolate or milk-based desserts. Our human cells can actually rupture as a result of trying to digest these large cells.

And so, milk products have many negative health repercussions. They are therefore best avoided. Instead we should aim for protein sources more aligned with what our bodies need, such as nuts and seeds!

Vegan Shopping

If you want to live a vegan lifestyle it is important that you consider the ins and outs of it first. After all, if you dont know where to get vegan foodstuffs then how will you avoid animal-based products?

Therefore, the next time you visit your supermarket or mall, find out what vegan products are for sale. Usually, they will have a section with meat-free or animal-friendly products. And pay attention to cheaper, own-brand foods. Surprisingly, these are often made without using animal products!

Also, dont be fooled by those bogus words like natural and diet. These words have no legal definition and can thus be put on anything. One famous example from the 90s was the word light. People bought it in droves, believing that it would help them diet. It turned out, however, that they were fatter and had more sugar in them than the regular kind. When the companies were taken to court they said, but theyre lighter in color. Pretty cynical but no less true for that. Two words that do have legal meaning are organic in the US and bio in Europe. So you can use these words to guide your purchasing habits.

Get used to checking ingredient lists. Also, have a smartphone handy so that you can google those words you dont know. To hide unhealthy ingredients from you, companies often make ingredient lists indecipherable. Dont let them fool you!

Make sure you visit your local fruit and vegetable market. These places offer wholesome, organic foods for a fraction of the price. Whats more, many of the people youll find here really understand and respect food. This means they can tell you a great deal about whats available locally and the might know some nutritious recipes for what theyve got on sale.
