Quinoa has been around feeding people for well over 3,000 years dating back to the ancient Inca people of South America. The grain like plant can thrive in the worst of conditions even to growing in the high cool altitudes of the Andes Mountains. Quinoa made resurgence in the 1970's with the suggestion of the spiritual Bolivian teacher to his students and the focus on meditation. The UN saw the benefit in quinoa and they declare it a super food.

The health benefits of quinoa exceed that of most grains. Quinoa contains some very healthy phytonutrients that are show the ability to reduce inflammation in the body. The promise of benefits extends to that of lab animals where quinoa helped to treat obesity successfully, especially helpful in maintaining weight loss too. Quinoa was used by ancient civilizations for its medicinal qualities as well as for a beneficial filling food.

Today the health benefits known for eating quinoa are wide. First, it helps with digestive system issues. Second, it helps to reduce high blood pressure. These two benefits alone make this the perfect food for many who suffer from these health conditions. Quinoa is a perfect food to go with the gluten free diet. Vegans and vegetarians also love to include quinoa in their diets. The biggest difference in quinoa from grains is the high levels of amino acids, making it a much healthier choice for recipes that call for grains.

Cooked Quinoa

You probably aren't going to want to eat cooked quinoa on its own, but I guess it's possible if you add a bit of brown sugar and butter. You're better off cooking it in the manner specified in this recipe and adding it to a salad or to one of your favorite recipes. Don't be afraid to experiment. Cooked quinoa can be added to wide variety of dishes to give them an exotic flavor.

This is the easiest recipe in the book. You need to be able to cook quinoa in this manner in order to use it in a lot of other dishes. In future recipes when I say to add cooked quinoa to the recipe, this is how you should cook it.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • A pinch of salt

Directions:

1. Add the quinoa, salt and water to a saucepan and bring the water to a boil.

2. Cook until the grains become translucent and the germ detaches itself and forms a halo around the seed. This usually takes 10 to 15 minutes after the water comes to a boil.

Additional Directions:

To soften the taste of the quinoa a bit, try cooking it in chicken broth instead of water. This takes the strong flavor down a notch, allowing you to use it in foods so that it adds a bit of flavor instead of being the main flavor.

Ingredients:

  • 1 cup quinoa
  • 2 cups water

Directions:

1. Add the dry quinoa to a skillet and roast on medium heat. Be sure to keep the quinoa seeds constantly moving so they don't get scorched. Dry-roast the seeds for 5 minutes.

2. Add the quinoa and water to a saucepan and bring the water to a boil.

3. Cook until the grains become translucent and the germ detaches itself and forms a halo around the seed. This usually takes 10 to 15 minutes after the water comes to a boil.


California Quinoa Rolls

In order to make sushi rolls with quinoa instead of rice, you need to overcook the quinoa so it becomes softer and squishy. After cooking it for 15 minutes, remove the lid and add a half cup of water, then cook it while stirring it until it's creamy and sticky.

You're going to need a bamboo sushi rolling mat. California rolls are normally rolled inside out (with the rice on the outside). Cover the mat with a sheet of plastic wrap before rolling to keep the rice from sticking to the mat.

Ingredients:

  • 2 cups sticky cooked quinoa
  • 2 avocados, sliced
  • cup crab meat
  • 1 pack nori (seaweed)
  • 1 tablespoon sesame seeds, roasted
  • 1 cucumber, seeded and diced
  • Wasabi (optional)
  • Soy sauce (optional)

Directions:

1. Remove one sheet of nori from the package and fold it lengthwise. Split it in half along the fold.

2. Set the sheet at the bottom of the mat.

3. Spread a small amount of sticky quinoa across the sheet. You want a thin, evenly-distributed layer spread across the entire sheet.

4. Sprinkle sesame seeds on the quinoa.

5. Flip the nori over so the quinoa is facing down.

6. Add a few strips of cucumber across the bottom of the nori sheet.

7. Add a few pieces of avocado above the cucumber.

8. Add a row of crab above the avocado.

9. Keep the rows thin or you won't be able to properly roll it up.

10. To roll, place your thumbs under the mat and roll it slowly, backing off a bit whenever you need to in order to ensure a good roll.

11. Once the roll is complete, apply a bit of pressure to pack it down tight.

12. Cut the roll into 6 pieces of equal size.

13. Garnish with soy sauce and/or wasabi if you'd like.

Additional Directions:

You might find that you aren't able to roll the sushi with the quinoa facing the outside. If this is the case, place the crab, avocado and cucumber on top of thin layer of quinoa and roll it so the quinoa is on the inside.
