Did you know that you can include Quinoa in just about any meal course of the day? Thats right! Quinoa is such a versatile grain that you can spin just about anything. The best thing about it is that it is packed with protein. This makes it an ideal grain for just about any dietary lifestyle as it can serve as an excellent alternative to animal protein. As if that wasnt beneficial enough, Quinoa possess the ability to go the extra mile as it can easy be added to sweets such as chocolate or honey to create amazing desserts. Luckily, Quinoa is an incredibly easy grain to utilize once you know the basics, and that is right where we will be beginning our journey. So, grab your Quinoa, and lets get started.
Fluffy Quinoa How to Cook Perfect Quinoa
The key to any amazing Quinoa recipe is beginning with a delicious and fluffy Quinoa base. This recipe will ensure that you get the perfect texture and flavor every time you need a batch of quinoa.
Yields: 3 cups
Time Needed: 20 min
Ingredients
- Uncooked Quinoa (1 cup)
- Water (2 cups)
- Salt (12 tsp.)
Directions
1. Add all Ingredients into a medium saucepan, over high heat, and bring to a boil.
2. Once boiling, reduce the heat to low and continue cooking until the Quinoa has absorbed most of the liquid (15 to 20 min).
3. Once fully absorbed, remove from heat and fluff with a fork.
4. Serve, or refrigerate until you are ready to utilize.
Shitake Snow Peas Quinoa
This dish may be served as a delicious vegetarian main or as a delectable side dish.
Serves: 4
Time Needed: 15 min
Ingredients
- Fluffy Quinoa (3 cups, recipe at the front of the book)
- Sesame Oil (1 tbsp.)
- Garlic Cloves (1 tbsp.)
- Shitake Mushroom (4 oz., thinly sliced)
- Snow Peas (4 oz., thinly sliced)
- Salt (14 tsp)
- Black Pepper (14 tsp.)
- Soy Sauce (1 tbsp.)
- Green Onion (1 stalk, sliced)
Directions
1. In a medium non-stick skillet, heat sesame oil over medium heat. Add in garlic and cook for about a minute, stirring frequently so that it doesnt burn.
2. Add in mushrooms and cook until tender (about 5 min)
3. Next, add in snow peas, salt, and pepper. Continue stirring until peas become bright green in color (about 3 minutes) and remove from heat.
4. Add in all remaining Ingredients and toss until fully combined.
5. Serve and enjoy.
Lemon Cranberry Quinoa Salad
This salad is simple, yet delicious.
Serves: 8
Time Needed: 5 min
Ingredients
- Cooked Quinoa (2 cups)
- Olive Oil (14 cup)
- Parsley (12 cup, chopped)
- Lemon Juice (13 cup)
- Lemon Zest (1 tbsp.)
- Cranberries (14 cup)
- Almonds (13 cup)
- Salt (14 tsp.)
- Pepper (14 tsp.)
Directions
1. Combine all the Ingredients in a bowl and toss until fully combined.
2. Serve and enjoy.
Orange Avocado, and Kale Quinoa Salad
This recipe provides a delicious and refreshing salad that can be great as either a main dish or a side dish.
Serves: 8
Time Needed: 5 min
Ingredients
Dressing:
- Olive Oil (3 tbsp.)
- Orange Juice (2 tbsp.)
- Lemon Juice (2 tbsp.)
- Honey (2 tsp.)
- Salt (14 tsp.)
- Pepper (14 tsp.)
Salad:
- Kale (1 bunch, finely chopped)
- Olive Oil (1 tsp.)
- Lemon Juice (2 tsp.)
- Salt (14 tsp.)
- Cooked Quinoa (2 cups)
- Orange (2 large, peeled, chopped)
- Avocado (1 large, peeled, chopped)
- Fresh Mint (2 tbsp., chopped)
- Pistachios (13 cup)
- Feta Cheese (14 cup, crumbled)
Directions:
1) Combine all the dressing Ingredients together and whisk until fully combined.
2) Combine all the salad Ingredients in a bowl.
3) Serve and dress each serving with preferred amount of dressing
4) Enjoy!
Chicken Quinoa Soup
Rich, delicious and packed with protein.
Serves: 4
Time: 20 minutes
Ingredients:
- 2 cups cooked quinoa
- 2 boneless and skinless chicken breasts, diced
- 4 cups chicken stock
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 1 cup baby spinach
- 1 carrot, cut into thin rounds
- cup frozen broccoli
- cup frozen cauliflower
- tbsp. olive oil
- tsp. Salt, to taste
Directions:
1. Heat oil in a saucepan.
2. Add in onion, carrot, and garlic. Cook for 5 minutes.
3. Add the chicken and veggies. Cook for 6-7 minutes.
4. Add the chicken stock and season to taste.
5. Once the mixture boils add the quinoa, and spinach and cook until wilted.
6. Serve while still hot.
Split pea Quinoa Soup
There is nothing better than a hardy soup to end the day.
Serves: 4
Time: 1 Hour
Ingredients:
- 1 cup yellow split peas
- cup uncooked Quinoa
- 4 cups vegetable broth
- bay leaf
- tsp. ground coriander seeds
- tbsp. olive oil
- Salt and pepper, to taste
Directions:
1. Rinse the peas under cold water and remove any black ones.
2. Place the rinsed peas into a saucepan.
3. Add the remaining Ingredients and give it a good stir.
4. Cover and cook for 60 minutes. Season to taste and serve while still hot.
