After Commiserating with Twelve of My Closest Girlfriends, Weve Decided He Really Loves Me Apricot Walnut Muffins
These mufns go together very quickly. You can also substitute an equal quantity of other mix-ins (such as chocolate chips, other dried fruits, and nuts) for the apricots and walnuts.
2 cups all-purpose our
1/2 cup rmly packed brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1/2 cup (1 stick) unsalted
butter, melted and cooled
1 large egg, lightly beaten
2 teaspoons vanilla extract
1 cup chopped walnuts
1 cup chopped dried
apricots
Preheat the oven to 400F. Butter or lightly coat with nonstick vegetable cooking spray twelve 3-by-1 1/4-inch (3 1/2- to 4-ounce) muffn cups.
In a large bowl, stir together the flour, brown sugar, baking powder, and salt. In another bowl, stir together the milk, butter, egg, and vanilla until blended. Make a well in the center of the dry ingredients. Add the milk mixture and stir just to blend. Stir in the walnuts and apricots to combine.
Spoon the batter evenly among the prepared muffin cups. Bake for 15 to 20 minutes, or until a cake tester inserted into the center of one muffin comes out clean and the muffins are just starting to brown.
Remove the muffin tin or tins to a wire rack. Cool for 5 minutes before removing the muffins from the cups; finish cooling on the rack. Serve warm or cool completely and store in an airtight container at room temperature.
Makes 12 muffins.
While He Casually Reads the Morning Paper, Ill Be Silently Planning Out the Course of Our Entire Relationship Waffles
To add a hint of citrus to these wafes, stir in 1/4 to 1/2 teaspoon of grated fresh orange or lemon zest. For romantic appeal, make these in a heart-shaped wafe iron. Serve with a salad made from seasonal fruits. If you dont use all the batter, it can be covered and refrigerated and used the next day.

1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk, at room temperature
1/2 cup (1 stick) unsalted butter, melted and cooled
2 large eggs, at room temperature, separated
2 teaspoons vanilla extract
Preheat the waffle iron according to the manufacturers instructions. (The iron is ready when a few drops of water sprinkled onto the surface immediately turn into dancing droplets.)
In a large bowl, stir together the flour, sugar, baking powder, baking soda, and salt. In another bowl, stir together the buttermilk, butter, egg yolks, and vanilla. Make a well in the center of the flour mixture. Add the liquid ingredients and stir just to combine.
