The Classic Recipes Book
Dear Reader,
Over the past twenty-two years I have compiled many notes and recipes based on meals I have eaten both in restaurants and in the homes of family and friends, and I have absorbed information from countless cookbooks, magazines, cooking shows, and demonstrations. This passion for food knowledge led me to enter culinary school, where I learned the nuts and bolts of professional cooking from classically trained chef instructors. Creating a recipe notebook was a requirement in this education. I built upon this notebook with each professional restaurant experience, constantly expanding my repertoire. My personal and professional culinary pursuits have resulted in a valuable cooking resource.
The only problem with my culinary library is that I have to sift through all the information to find all the recipes I need every time I want to cook a meal. In the interest of saving time and space, I have written a collection of classic recipes and compiled them into one book so I no longer have to spend time searching in different files, notebooks, magazines, and cookbooks. I have synthesized my information into one volume so I can get on with the meal, from appetizer to dessert. I hope you will find this book a valuable tool in your culinary pursuits.

Introduction
The purpose of this cookbook is to provide you with a comprehensive resource for the kitchen in one book. It is more than a basic cookbook, though.
