      Lynette Rohrer Shirk is a classically trained chef who attended the California Culinary Academys Professional Chef Program and has worked in the kitchens of Wolfgang Pucks Postrio and Masas. She has also worked in the pastry departments at Chez Panisse, Bizou, and Stars Palo Alto restaurants, as well as at William Sonoma, Inc.s Corporate Headquarters. Shirk has had the honor of cooking at the James Beard House in New York City, and she has lectured at the Association of Education in Journalism and Mass Communication Annual Convention on the experience of writing and editing the 101 recipes for Wild Women in the Kitchen. She lives in Lewisville, TX.

    Soups Tomato Bisque A bisque is a rich soup that combines vegetables, stock, and milk or cream. Serve for dinner with some chewy breadsticks and a mixed fruit salad.SERVES 61 tablespoon olive oil1 onion, finely chopped1 (10-ounce) container refrigerated Alfredo sauce1 cup chicken or vegetable broth1 cups whole milk2 (14-ounce) cans diced tomatoes, undrainedteaspoon dried basil leavesteaspoon dried marjoram leaves In heavy saucepan, heat olive oil over medium heat and add onion. Cook and stir until onion is tender, about 4 minutes. Add Alfredo sauce and chicken broth; cook and stir with wire whisk until mixture is smooth. Add milk and stir; cook over medium heat for 2 to 3 minutes.

    Meanwhile, puree undrained tomatoes in food processor or blender until smooth. Add to saucepan along with seasonings and stir well. Heat soup over medium heat, stirring frequently, until mixture just comes to a simmer. Serve immediately. Alfredo Sauce Alfredo sauce is basically a white sauce, usually with some cheese added. You can find it in the refrigerated dairy section of your supermarket.

    It can also be found on the pasta aisle. In addition to Alfredo sauce, four-cheese sauce, cheddar pasta sauce, and roasted garlic parmesan pasta sauce are available. Picture 7 Cheesy Clam Chowder This rich, thick, and super easy chowder can be made with anyother seafood too. Think about using canned oysters, cannedmussels, frozen cooked shrimp, or lump crabmeat.SERVES 682 (10-ounce) cans condensed broccoli cheese soup2 cups half and half2 cups milk3 cups refrigerated hash brown potatoesteaspoon dried marjoram2 (8-ounce) cans clams, undrainedPicture 8 teaspoon pepper Combine soup, half and half and milk in large heavy saucepan. Bring to a boil, then add potatoes and marjoram. Bring to a boil again, reduce heat, and simmer for 15 minutes.

    Add clams and pepper and simmer for 510 minutes longer until soup is hot and blended. Serve immediately. Super Quick Beef Vegetable Stew There are so many types of fully prepared meat entres in your grocery store;browse the selection and stock up!SERVES 63 tablespoons olive oil1 onion, chopped3 cloves garlic, minced1 (16-ounce) package prepared roast beef in gravy1 (16-ounce) package frozen mixed vegetables1 (10-ounce) can cream of mushroom soup2 cups waterteaspoon dried thyme leaves In heavy large saucepan, heat olive oil over medium heat. Add onion and garlic; cook and stir until tender, 45 minutes. Meanwhile, cut the cooked roast beef into 1" chunks. Add to saucepan along with gravy, frozen mixed vegetables, soup, water, and thyme leaves.

    Cook over medium high heat until soup comes to a boil, about 79 minutes. Reduce heat to low and simmer for 67 minutes longer until vegetables are hot and tender. Serve immediately. Soup or Stew? The difference between soup and stew is the thickness of the liquid. Soups are generally thin, sometimes made with just broth or stock. Stews have ingredients that thicken the liquid, including potatoes, flour, cornstarch, or pureed vegetables.
