Chicken With Peanut Butter And Ketchup
Serves: 6 to 10
Ingredients :
- 1 chicken
- 8 ounces of pineapple chunks with its juice
- Half cup of raisins
- 1/3 cup of orange juice
- Half teaspoon of nutmeg
- cup of brown sugar
- Pinch of Salt
- Pinch of Freshly ground pepper
Directions:
- In a big bowl mix all the ingredients together to make sure that all the ingredients combine.
- Place everything in a baking pan, cover it with a tin foil and bake it for 1 hour in the oven on 350 F.

Black Beans and Ground Beef Soup
Serves: 4
Ingredients:
- 16 ounces of ground beef
- 1 chopped onion
- 1 package of taco seasoning mix
- 16 ounces of frozen corn
- 16 ounces of black beans
- 14 ounces of canned tomatoes
- 8 ounces of canned tomato sauce
- 4 ounces of diced chilies
- Salt
- 1 cup of water
Directions:
- Saut the ground meat and onions with some vegetable oil from 2 to 3 min. Let them cool down for 1 min then place them in a big freezing bag.
- Add the rest of the ingredients to the bag and seal it. Shake the bag for almost 40 seconds or more to make sure that all the ingredients are well combined.
- Dump the mix in your crock pot and cook it for 1 h and half on high heat.
- Once the time is up, serve your soup with some tortilla chips on the side and enjoy.
Mexican Lasagna
Serves: 6
Ingredients:
- 1 can of creamy chicken soup
- 1 can of fiesta nacho cheese
- 1 can of mushroom soup
- 1 can of Ro-Tel tomatoes
- 2 cups of shredded Mexican cheese
- 1 can of beans
- 4 large tortillas
- 1 can of corn
- cup chopped cilantro
- 1 teaspoon of cumin
- 4 cups of chopped chicken (cooked)
Directions:
- In a bowl mix the chopped chicken and chicken soup with nacho cheese, cumin, tomatoes and cilantro.
- Divide the mix into 4 cups. Place the first tortilla in a greased pan and cover it with 2 cups of the mix. Place another tortilla on top and cover it with corn and beans. Layer another tortilla and cover it with the rest of the mix. Place the last tortilla and place the fiesta nacho and Mexican cheese on top.
- At the end place on top the fiesta nacho and Mexican cheese.
- Preheat the oven on 350 F and cook it for 20 min.
- Enjoy.
Stuffed and Baked Courgette
Serves: 3 to 6
Ingredients:
- 3 courgettes
- Half cup of chopped bacon
- 1 tablespoon of sour cream
- teaspoon of curry
- 1 teaspoon of chopped thymes leaves
- 1 tablespoon of butter
- Half cup of chopped onion
- 1 seeded and chopped tomato
- Salt
- Pepper
- Grated Parmesan
Directions:
- Slice the courgettes in half lengthwise and scoop out its flesh with a spoon.
- In a pan saut the onions and bacon for 3 min with a tablespoon of butter, curry and a pinch of salt.
- Chop the courgette flesh and mix it in a bowl with the cream, the cooked onions and bacon and the chopped thymes leaves with a pinch of salt and chopped tomato.
- Place the courgettes in a greased baking pan, fill them with the mix and grate on them some parmesan.0 cheese.
- Preheat the oven on 375 F and cook the courgettes for 30 min.
- Enjoy.
Layered Pizza
Serves: 3 to 6
Ingredients:
- 3 medium sized tortillas
- 1 can of refried beans
- 1 pound of minced turkey
- 1 small can of sliced olives
- 1 diced tomato
- 2 thinly sliced onions
- Mexican grated cheese
- cup of water
- Half cup of chicken broth
- Salt
- Pepper
- Chili powder
- Oregano
- Cumin
Directions:
- Brush your tortillas with some canola oil from and cook them in the oven for 3 min on each side until they become golden and crispy.
- Saut the minced turkey in a non-sticking pan with a pinch of salt, pepper, cumin, chili powder and oregano.
- In a bowl mix the beans with half cup of chicken stock and cook them in saucepan until they become smooth.
- Place the tortillas in front of you to start assembling them.
- Divide your filling into 3 quantities.
- Brush the first tortilla with some red sauce and place on it the turkey meat with some parmesan on top. For the second tortilla brush it with beans salsa and place it on top of the first tortilla leaving the brushed side with beans down facing the cheese.
- In a small bowl mix the tomato, onions and olives together and place the 1/3 of them on top of the second tortilla then add on top of it some cheese.
- Repeat the process again for the other 2 pizzas.
- Preheat the oven on 400 F and bake them for 5 min or until the cheese melts.
- Enjoy.
Baked Pizza
Serves: 4
Ingredients:
- 1 can of biscuit dough
- 2 cups of sliced pepperonis
- 1 cup of marinara sauce
- 1 cup of shredded mozzarella
- 1 cup of sliced green and black olives
Directions:
- Cut the biscuits into 6 slices and place them in a greased baking pan, place the pepperoni slices on top of them followed by the olives and cheese.
- Preheat the oven on 325 F, cook it from 25 to 30 min and enjoy.
Beef Sausage Stew
Serves: 4
Ingredients:
- 14 ounces of smoked and sliced beef sausage
- 2 chopped cloves of garlic
- 2 cups and half of chicken stock
- 1 cup of brown Ale
- 1 tablespoon of apple vinegar
- 2 tablespoons of onion powder
- half thinly sliced head of cabbage
- half teaspoon of fennel
- 2 peeled and diced potatoes
- 1 tablespoon of olive oil
- Half teaspoon of black pepper
- Salt
Directions:
- Saut the slices of sausages in pan with olive oil 2 min, then add to it 1 tablespoon of onion powder. Cook them for another 2 min.
