Beefy Frito Dump Casserole

Ingredients:

  • 28 oz. can of red enchilada sauce
  • 2 (15 ) ounce cans of black beans, drained
  • 1 cup of frozen corn
  • 1 4 oz. can of small can diced green chilies, rinsed and drained
  • 1 cup of cheese (Colby/Monterrey jack is best)
  • 1/2 pound of ground beef
  • 1 bag Fritos scoops corn chips

Optional Toppings:

  • Cheese
  • Sour Cream
  • Guacamole
  • Salt/pepper to taste

Instructions:

1. Pre-heat oven to 350 degrees.

2. Brown the ground beef in a skillet.

3. In a large bowl, combine the drained black beans, frozen corn, green chilies, and cheese.

4. When the ground beef has been browned, add the beef to bowl and gently combine.

5. Pour in your desired amount of enchilada sauce. Pour into a 913 casserole dish or two 88 dishes.

6. Bake at 350 degrees for 35 minutes or until warmed through. There will be some bubbling on the outside edges.

7. Garnish with cheese, sour cream, guacamole and scoop with the Fritos chips.

Cheesy Chicken Dump Casserole

Ingredients:

  • 3-4 chicken breasts, chopped and cooked
  • 16 oz. egg noodles, cooked according to package
  • 24 oz. of sour cream
  • 2 cans of cream of chicken soup
  • 8 oz. (2 cups) of shredded cheddar cheese
  • 8 oz. (2 cups) shredded mozzarella cheese
  • 1 sleeve of Ritz crackers, crushed
  • 1/4 c. butter, melted

Instructions:

1. Combine chicken, sour cream, soup & cheeses in a large bowl; stir to combine.

2. Add the noodles and gently stir till coated.

3. Pour into a greased 913 baking dish.

4. Mix crackers and margarine; sprinkle over the top.

5. Bake at 350 degrees for 30 minutes or till crackers are crispy and golden brown and cheese is melted.

Cheesy Dump Macaroni and Cheese

Ingredients:

  • 2 cups of elbow macaroni, cooked according to package
  • 1lb (4 cups) of extra sharp cheddar cheese, shredded
  • 1/2 cup of butter
  • 3 eggs, beaten
  • 1 (12 ounce) of can evaporated milk
  • Salt and pepper
  • 12 teaspoon of dry mustard
  • Paprika (optional)

Instructions:

1. Cook pasta according to package directions.

2. Mix cooked pasta and all ingredients in a sprayed casserole dish.

3. Sprinkle paprika on top for color if desired.

4. Bake in 350 degree Fahrenheit oven for 30 to 45 minutes until done.

5. Best served hot out of the oven.

Scrumptious Hamburger Dump Soup

Ingredients:

  • 1 lb of ground beef
  • 1 (14 1/2 oz.) can of corn
  • 1 (14 1/2 oz.) can of green beans
  • 1 (14 1/2 oz.) can of carrots
  • 1 (14 1/2 oz.) can of mixed vegetables
  • 1 (14 1/2 oz.) can of green peas
  • 1 (15 oz.) can of stewed tomatoes
  • 4 beef bouillon cubes
  • 3 -4 medium potatoes, peeled and chopped
  • 2 -3 garlic cloves, diced fine
  • Water

Instructions:

1. Place ground beef and garlic into your big cooking pot while you are opening veggies, this will give it time to brown.

2. Place canned veggies into pot, do not drain. You need their liquid.

3. Cut up potatoes and unwrap bouillon cubes, add to the mix.

4. Add enough water to fill the pot. It usually is not a lot of water because of the canned vegetables.

5. Cook 3-4 hours.

6. Serve with some like cheese over their soup.

Dump Swiss Steak

Ingredients:

  • 1lb round steak
  • 1 (15 ounce) can of diced tomatoes, undrained
  • 0.5 (1 1/4 ounce) package of beef and onion soup mix (dry)
  • 0.5 (1 1/4 ounce) package of brown gravy mix (dry)
  • Mashed potatoes

Instructions:

1. Cut steaks into portion sized pieces. Combine all ingredients together in a gallon Ziploc bag. (You can brown meat first if desired, but not necessary.).

2. Freeze at this stage, if desired. (If frozen, thaw before baking).

3. Transfer to baking dish, Bake covered at 350 for 1 hours.

4. Serve over mashed potatoes.

Deeply Amazing Pizza

Ingredients:

  • 1 can of biscuit dough
  • 1 cup of marinara sauce
  • Sausage, thinly sliced
  • Sliced olives
  • 1 cup mozzarella cheese shredded

Instructions:

1. Cut each biscuit into 6 pieces and drop in bottom of glass or ceramic baking pan sprayed with nonstick spray.

2. Cut sausage slices into quarters and distribute over biscuits.

3. Add sliced olives and then a layer of sauce, about 1 cup. (add in blops, and do not cover entire surface).

4. Sprinkle with thin layer of cheese.

5. Bake at 325 for 25 to 30 minutes.
