In reality, they are soft cookies loaded with fun sprinkles. Fun and festive, they are a great addition to any holiday party. cup butter, softenedcup granulated sugarcup unsweetened cocoa powderteaspoon baking sodateaspoon salt1 large egg1 teaspoon vanilla1 cups all-purpose flour1 cup rainbow sprinkles, such as Wiltons Rainbow Jimmies1 recipe Simple Frosting In a large bowl, beat butter on medium speed until creamy. Add sugar, cocoa powder, baking soda, and salt.

Mix well until combined. Mix in the egg and vanilla. Slowly beat in flour. Finished dough should not be sticky. Fill a small bowl with rainbow sprinkles. Roll dough into 24 one-inch balls and then roll in the sprinkles until completely coated.

Place sprinkle-coated dough balls on greased baking sheets and refrigerate 15 minutes. Bake at 375 degrees F. for 8 to 10 minutes. Dont overcook; the tops should not crack. While cookies are baking, prepare the frosting. To assemble cookies, spread frosting on 1 cookie and top with a second cookie to make a sandwich.

Repeat with remaining cookies. These cookies are good to eat without frosting too! Makes 12 sandwich cookies Simple Frosting cup butter, softened1 cups powdered sugar1 teaspoon vanilla In a large bowl, beat together butter and powdered sugar on low speed. Add vanilla and beat on high speed until light and fluffy. Santa Sugar Cookies Frosting sugar cookies is a family tradition. In a large bowl, cream together butter or margarine, sugar, and eggs until well blended. Add vanilla, baking powder, baking soda, salt, and sour cream and stir well. Add flour and gently combine. If dough seems too sticky, add just a little more flour and refrigerate 30 minutes. (If dough is not sticky, there is no need to refrigerate.) On a well-floured surface, roll out dough to -inch thickness. Cut dough into circles with a 2-inch round cookie cutter (the diameter can be a little more or less if you dont have this precise size).

Bake on ungreased cookie sheets about 9 minutes, until they are set, barely golden on the edge (you dont want to overcook them!). Remove cookies to a wire rack to cool. To make Santas face, decorate cookies one at a time so the frosting does not have time to harden before sprinkling on sugar crystals and coconut. Spread Buttercream Frosting over the entire cookie. Gently place a small bowl over the bottom two-thirds of the cookie. Sprinkle the uncovered portion of the cookie with red sugar crystals.

Remove the bowl and sprinkle coconut over the bottom third of the cookie, coming up a little on each side to meet the hat. This will be Santas beard and should leave you with a small frosting-only area for Santas face. Use 2 chocolate chips to make Santas eyes and 1 cinnamon red hot for his nose. Place 1 miniature marshmallow on the left or right side, where Santas hat and beard meet. Makes 4 dozen cookies. *Using margarine will give you softer and fluffier cookies.

Butter tends to make a flatter cookie. Buttercream Frosting 3 tablespoons shorteningcup butter or margarine, melted1 teaspoon vanilla1 tablespoon milk3 cups powdered sugar
