ContentsIntroductionDear reader and multicooker chef,Welcome to Instant Cooking with Six Sisters Stuff ! We hope you enjoy the recipes weve collected here as much as we do. Instant cooking is a real gift in our sometimes too-scheduled lives.We thought wed introduce this book with some common-sense instructions about instant cooking.First, its not really instant. Multicookers like the Instant Pot and other brands are actually electronically controlled pressure cookers, and the addition of pressure to heat makes them able to do a lot of things quickly that would take longer via a traditional method (like roasting meat, for example). But because multicookers must first pressurize their contents, some processes (like soft- or hard-boiling eggs) take about the same amount of time overall, because some time is taken getting the cooker up to either high or low pressure. However, much of the time, as is the case with hard-boiling eggs, there are definite advantages to the instant cooking methodfewer ruptured eggs and easier-peeling shells, to name two.Second, there are several varieties and brands of multicooker on the market. The recipes here were tested on a 6-quart Instant Pot Duo, though some would work best in an 8-quart multicooker. The functions on most multicookers are similar, but might not be the same as described here. Make sure you know your multicookers functions well before beginning. Some recipes might take a little tweaking to make the best use of your particular multicookers functions.Third, some of the recipes require accessories beyond those that usually are included with a multicooker. These make the multicooker much more useful. The accessories weve used include:A 7-inch springform pan for cheesecakes, brownies, or other cakes7-inch cake pans, including stackable pans for cakes as well as for cooking separate ingredients at the same timeLoaf pans for breadsA glass lid to use when not bringing the pot to pressureAn extra silicone sealing ring. After a little use, the silicone sealing rings can retain the flavors of whats been cooked. Having separate rings for cooking sweet or savory foods keeps your cakes from tasting like garlic.An extra insert (for making dinner in one and dessert in the other)A silicone egg bites mold, handy for making not only egg bites but other small molded biteslike brownies!Special mitts for handling hot insertsTrivets and steamer insertsFourth, using a multicooker means taking safety seriously.
