Recipe 1: Mexican Chicken Meatloaf
This meatloaf definitely has a couple of exceptional key points. It is made with ground chicken, and thats very hearty choice. It is also made with black beans and some other typical Mexican dish ingredients, to give it a taste similar to when you are eating a burrito, for example.
List of Ingredients:
- 1 pound ground chicken
- 1 cup kernel corn
- 1 cup seasoned black beans (rinsed and drained)
- cup crushed tortilla chips
- 1 large egg
- 2 cups mild chunky salsa
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- Salt, pepper
Yield:
Cooking Time: 1 hour

Instructions:
- Preheat the oven to 375 degrees F.
- In a large mixing bowl, combine the ground chicken meat, corn, black beans, salsa, and seasonings.
- In a Ziploc bag, place all the tortilla or corn chips and crush them with rolling pin or your hands so they form breadcrumbs.
- Add to the meatloaf mixture. Add the egg and use your hands to combine.
- Place in the loaf pan and bake for 50 minutes.
- Slice away!
Recipe 2: Baked and Saucy Chicken Enchiladas
I never thought I would actually be brave enough to make an enchilada casserole. I thought it always looked so complicated and it was not for me. But its not. If I can do it, I promise you that you can do it and do it well. You will be so pleased with yourself and the end result.
List of Ingredients:
- 1 pound chicken (tenders or breasts, your choice)
- 12 corn small tortillas
- 2 cups chicken broth
- 2 minced green onions
- 2 minced cloves garlic
- 1 cup sour cream
- 1 cup ricotta cheese
- 2 cups shredded Cheddar cheese
- 1 teaspoon ground cumin
- Salt, pepper
- Pinch cinnamon
Yield: 8-10
Cooking Time: 1 hour

Instructions:
- Preheat oven to 350 degrees F.
- Cut the chicken in strips after cleaning it diligently.
- In a saucepan, mix the sour cream with the chicken broth and also the ricotta cheese.
- Add the salt, pepper, cinnamon, and cumin. Let it simmer.
- In a skillet, use some butter and start cooking the chicken strips with garlic.
- Once the chicken is cooked, place it in the bottom of a casserole dish and add the ricotta mixture on top.
- Add the small tortillas on top.
- Finally add the top layer with all the shredded Cheddar cheese.
- Bake in the oven for 30 minutes.
- Serve with a side of salsa.
Recipe 3: Simple Chicken Parmesan Sandwich
When we talk about Parmesan chicken, usually we picture chicken, cheese, and tomatoes. So, we are going to give it to you, but we are changing things up a little, because thats what we like to do. Instead of baked chicken breast, we are going to use the ground chicken, so get ready for an awesome new culinary experience!
List of Ingredients:
- 1-pound ground chicken
- 2 minced cloves garlic
- 2 Tablespoons chopped fresh parsley
- 2 Tablespoons chopped fresh basil
- 3 Tablespoons rice flour
- 2 eggs whites
- Salt, pepper
- 2 fresh, sliced tomatoes
- 4 thick slices Mozzarella cheese
- 4 large Kaiser breads with sesame seeds

Instructions:
- Lets make the chicken patties first.
- In a mixing bowl, place the ground chicken, garlic, parsley, basil, rice flour, and egg whites.
- Combine all ingredients very well; its better to use your hands.
- Form 4 patties. Add a little olive oil to a large skillet and start cooking.
- Prepare the other ingredients to make the sandwhich, so when the patties are done, you can start assembling.
- Before the patties are fully cooked, add a Mozzarella slice so it can melt nicely on top.
- You will place one patty on the bun and add sliced tomato, salt, pepper.
Recipe 4: Delicious and Simple Chicken Casserole
Casseroles are awesome. You can create them at the last minute with your left overs or you can purchase specific ingredients you have been craving and add them as well. This recipe is very tasty and very easy to prepare. I love the combination of wine, cheese, chicken, and other ingredients.
List of Ingredients:
- 2 cups shredded cooked chicken
- 2 cups sweet peas
- 3 minced cloves garlic
- chopped red onion
- 1 cup chicken broth
- dry white wine
- 2 cups Ricotta cheese
- 1 cup shredded Parmesan cheese
- Salt, pepper
- 4 tablespoons ( stick) unsalted butter, divided
- 1 cup seasoned breadcrumbs
- 4 Tablespoons butter
Yield: 4-6
Cooking Time: 1 hour

- Preheat oven to 400 degrees F.
- Grease a large baking dish. Set aside.
- In a large saucepan, heat the butter and cook the garlic and onions.
