HELLO THERE!
Welcome to my book? This feels surreal to sayor to write, ratheras I usually introduce people to little food videos on my YouTube channel this way. For quite a few years now, Ive been sharing my vegan recipes with people on the internet. Most times, my videos revolve around simple and easy meals you can put together in a pinch. Other times, they feature me taking a stab at more elaborate recipe endeavors, such as baking Zodiac-themed birthday cakes, or re-creating meals from popular vampire romance novels. With my content, whether its online or here in this book, I simply want to showcase how fun, delicious, unique, and beautiful vegan food can be. I love to cook, believe it or not! Making food for myself is absolute self-care.
It sounds clich, but cooking is almost meditative for me. It gives me the opportunity to occupy my mind with simple steps, staying in the moment, rather than worrying about anything else I cant control. And I think cooking with others is even better. Its my favorite way of spending time with family and friends, so I recommend getting together with some of your loved ones to test out the dishes in this book. After all, there are more than 100 recipes to choose from in these pages (dont ask me which is my favoriteI love them all!), so I am certain youll find something for everyone to enjoy! Happy cooking!

VEGAN FOOD IS BORING
Of all the negative assumptions one might make about the vegan diet, thinking it is boring hurts my heart the most. I mean, sure, plain rice and beans with a side of trail mix and celery juice doesnt sound very appealing to me either, but trust me, it doesnt have to be this way.
Ive been working with nothing but vegan food for the past seven years, and its been a tasty seven years, I have to say. Removing animal products from my diet seemed at first like an insurmountable restriction, but it soon opened my mind and expanded my food and cooking horizons so much more. I was introduced to so many plant-based ingredients Id never heard of before, and had no choice but to figure out how to get as much flavor as possible out of these new, mysterious foods. And thus you could definitely say that, through lots of trial and error, I became a much better cook as a result. And it became especially fun for mecreating my own dishes and sharing them with my (sometimes pretty skeptical) family members. Honestly, nothing is more gratifying to me than seeing a picky eater enjoy something I have made.
Vegan cooking is not about accurately replicating animal product dishes, such as an actual steak (although this can make for a fun challenge, and my Maple MustardGlazed Seitan Steaks are definitely worth a try), but about creating delicious meals that can stand on their own two flavorful feetdishes that taste amazing and just so happen to be plant-based. There are about a hundred recipes in this book alone that prove just how good vegan food can be. These recipes occasionally reference traditionally non-vegan meals in the title ( Basil Ricotta Pasta , for example), but their flavors are, although varied and unique, just as yummy and satisfying as the original. Plant-based food is so incredibly versatile. It can be hearty and satisfying ( One Pot Hummus Ramen or Rice Paper Tteokbokki Soup ) or light and fresh ( Everything Bagel & Kale Summer Rolls or Banh MiStyle Salad ). You can make meals that are super quick and simple ( Lemon Tofu or Chickpea Pancakes ) or a little more impressive or fancy/chic ( Potato & Thyme Galette or the Enchilada Crunch Wraps ) (Im pretty sure nobody has called a crunch wrap fancy or chic before, but, trust me, youll feel like a pro chef serving these).
Everyday vegan meals can easily go beyond your classic banana bread, avocado toast, and falafel with hummus rotation. These are all delicious things to start with, but creating recipes gets really fun when you draw inspiration from simpler or standard meals and use them in a creative new way! And just like that, you have recipes for Peanut Butter Banana Bread Granola, Overnight Tofu Avocado Toast, and Falafel Crumble Tacos . On top of that, pretty much every recipe in this book includes ideas for ingredient alterations. This allows for even more variations, giving you countless ways of enjoying each of these vegan recipes. You really dont have to compromise flavor when choosing to cook vegan. Whether you simply want to eat less meat or include more fruits and vegetables in your diet, or youre already living the full-on plant-based lifestyle and are in desperate need of some new ideas, All Day Vegan has you covered!

HOW TO USE THIS BOOK
This book is going to walk you through an entire day of eating.
The recipes are divided into five categories: Breakfast, Lunch, Snacks, Dinner, and Dessert. I cover as much ground as I can with these recipes, designing them in a way that makes them fit into all types of daily situations: a quick and easy breakfast for you and your roommate; a birthday cake you want to bake for your best friend; an easy, yet fancy, date night dinner; a single serving dessert to treat yourself with after a long day at work; and so on. Of course, you can easily scale these recipes up or down to make them work best for you. And you dont have to be a home chef to get started on any of these, as Ill be here with you every step of the way! Each recipe includes most of the following: a list of ingredients, a breakdown of the steps, a rough indicator of cooking and preparation times (cooking time meaning the time your food will spend bubbling away on the stove or sitting in the oven, and preparation time reflecting the time youll be spending chopping, kneading, rolling, etc.), an estimate of how many servings youll be left with in the end (keep in mind serving sizes vary from person to person), useful tips and notes to aid you in the experience, and a photo of the finished dish, along with any necessary step-by-step photos to guide you through the more complex recipe directions.
