Vegetarian Meals For People On-The-Go: 101 Quick and Easy Recipes: summary, description and annotation

A tofu burger or a BLT? A green salad or a bologna sandwich? Whole grain or white bread? The choice became clearer and clearer to Vimala Rodgers. Granddaughter of a wholesale butcher, Vimala became a vegetarian in 1969 when she realized she was undermining her familys health by serving them the average American diet.

Although she had few tools for creating meatless meals that were nutritionally balanced and tasty, a dear family friend who was a longtime vegetarian became her dietary guide. Vimala was relentless in her quest to create healthful and delicious vegetarian meals. As she pursued her nutritional research, she used her kitchen as her experimental lab, and her eight childrenthen ranging from high chair to high school agebecame her taste testers.
As friends continued to ask for her recipes, Vimala realized that those she had scribbled on 3 x 5-inch cards needed to become a book. Vegetarian Meals for People On-the-Go was born. Designed for busy people who have little time to spend in the kitchen, these recipes are delicious, versatile, and above all, quick and easy to prepare.
This book is Vimalas personal invitation to you to create outstanding meals that will please the palate . . . and bring you rave reviews!

Deepest appreciation to my dear friend Sister Catherine Connell, who, in earlier years, gave me permission to be fully alive. Then, in 1989, it was she who dragged me to a health-food store and insisted that I purchase John Robbins book, Diet for a New America. The rest is history.

Much gratitude to Louise Hay for her many kindnesses and her unfailing support, and to Hay Housers Jill Kramer and Christy Salinas for their awesome, upbeat attitudes and their enlightened openness. Such gifts!

This book would still be whirling about randomly in my head, had not a friend said, Ill typeset it for you. An expert in her field, she volunteered hundreds of hours to giving this book its first real form, a gift I shall never forget. Assembling a cookbook is a massive undertaking, and for doing it with such a light heart, I gratefully acknowledge Maggie Shank, without whom you would not be holding this book in your hands.

And of course

A Fourth of July Rockets Red Glare thank you to all my incredible children, each so gorgeously different from the other, in whom courage, brilliance, and a relentless sense of humor have always flourished wildly! These qualities were called upon again and again as I bumbled my way through the process of learning how to be a momand how to cook naturally, often guessing my way through it all. Although my children are adults now, their distinguishing traits have not changed. Jean-Marie, Stephanie, Siobhan, Matthew-John, Mark, Amanda, Sara, and LukeI offer you my sincerest appreciation, love, and greatest respect. What an outrageous adventure!

HIPPOCRATES

I became a vegetarian in 1969. Because it was virtually an unknown lifestyle at the time, I had no magazines, recipes, or health-food stores to depend on for menus and information. Although nutrition education became a necessary component of my new diet, it took me at least five years before I felt I had really caught on to preparing balanced and tasty meals. Fortunately for my family and me, our doctor was a Seventh-Day Adventist, the only person I knew who had an extensive educational background in nutrition. While he knew very little about meal preparation, Dr. Lloyd Pratt became my guardian angel when it came to learning about minerals, enzymes, amino acids, vitamins, and the thousands of other components the body requires for sound, trouble-free functioning.

I mention this so youll know that the recipes in this book are based not only on ease of preparation and taste, but on sound nutritional principles as well. Although some recipes worked the first time around, most are the product of much experimentation, many redoes, and countless shuffling of ingredients to suit the fussiest palatefrom high chair through high school age and well beyond. I learned the hard waythrough trial and error. Ask my children: I had eight of them. They were my primary taste-testers.

Ive written this book for the many people who are beginning to question their eating habits and relate them to the state of their health. Although newsstands are filled with information on diet and health, how to eat better, vegetarianism, and the like, many of those whom I know and love dont have a clue where to start, and they simply dont have spare time to spend in the kitchen.
