I became a vegetarian in 1969. Because it was virtually an unknown lifestyle at the time, I had no magazines, recipes, or health-food stores to depend on for menus and information. Although nutrition education became a necessary component of my new diet, it took me at least five years before I felt I had really caught on to preparing balanced and tasty meals. Fortunately for my family and me, our doctor was a Seventh-Day Adventist, the only person I knew who had an extensive educational background in nutrition. While he knew very little about meal preparation, Dr. Lloyd Pratt became my guardian angel when it came to learning about minerals, enzymes, amino acids, vitamins, and the thousands of other components the body requires for sound, trouble-free functioning.
I mention this so youll know that the recipes in this book are based not only on ease of preparation and taste, but on sound nutritional principles as well. Although some recipes worked the first time around, most are the product of much experimentation, many redoes, and countless shuffling of ingredients to suit the fussiest palatefrom high chair through high school age and well beyond. I learned the hard waythrough trial and error. Ask my children: I had eight of them. They were my primary taste-testers.
Ive written this book for the many people who are beginning to question their eating habits and relate them to the state of their health. Although newsstands are filled with information on diet and health, how to eat better, vegetarianism, and the like, many of those whom I know and love dont have a clue where to start, and they simply dont have spare time to spend in the kitchen.
