The sumptuous main course, the decadent desserts and all those stomach-filling snacks are all rich in carbohydrates.

CHAPTER 1:

KETO DIET - A HEALTHY CELEBRATION

A good feast brings not just family but also everyone together and this is probably why Thanksgiving and Christmas are the two most celebrated holidays. Celebrating these two holidays is not complete without gifts, the company of loved ones, and of course, sumptuous food.

Roast turkey, pumpkin pies, stuffing, pecan pie, cranberry sauce, gingerbread, and peppermint chocolates, are just a few of the many sinfully rich foods that everyone enjoys.

But what if you are on a keto diet?

What is Keto Diet?

Keto diet is a very low carb, high fat, and moderate protein diet. The principle of the diet is to burn fat instead of glucose to fuel energy. Calories are mainly from carbohydrates, fat, and protein, also known as macronutrients. The body burns glucose to fuel energy and the excess glucose is stored in the body as fat.

During the diet, the body is deprived of glucose by lowering the carb intake to a maximum of 20 g daily while increasing consumption of foods rich in natural and good fat. Once the body starts to use fat as energy fuel, the production of ketones increases. These ketones produced fatty acids that the body can use to burn calories.

Keto Alternative Ingredients

In keto, carb intake is limited to a certain level; unfortunately, more than 50% of the food that the average person eats is rich in carbohydrates.

So if youre new to keto, you might think that your only options are a scant selection of leafy green vegetables, meat, fish, poultry, cheese, avocado, nuts, seeds, berries, olive oil, coconut oil, eggs, dark chocolate, and yogurt.

However, there are now various low carb alternative ingredients that would enable you to enjoy many of your favorite meals. For baked goods, you can substitute all-purpose flour with almond flour or coconut flour, hard cheese, and psyllium. Sugar is substituted with stevia, monk fruit, erythritol, and swerve.

Breakfast need not be a harrowing experience with the substitution of oats and cereals with chia seeds, almond meal, flaxseed, shredded coconut, sunflower seeds, hemp, and other nuts and seeds.

With all these alternative ingredients, you can eat cake or ice cream even on a keto diet.

CHAPTER 2:

KETO MAIN COURSE RECIPES - TURKEY

Bacon Wrapped Turkey

Serves: 4

Nutritional Information (per serving):

Calories: 369 | Fat: 24 g | Net Carbohydrates: 3 g | Protein: 32 g

Ingredients:

  • 1 pound raw turkey breast
  • 8 oz bacon strips
  • 3 skinless diced tomatoes
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • Salt, to taste
  • Bay leaves, to taste

Directions:

  1. Wrap the bacon strips around the turkey breasts.
  2. In a crockpot, combine garlic powder, diced tomatoes, black pepper, salt, and bay leaves.
  3. Place the wrapped turkey in the crockpot over the tomatoes and spices. Cover the cooker and on high, for 4 hours. You can also cook on medium for 6 hours or low for 8 hours.
  4. Remove the bay leaves from the cooked sauce.
  5. Transfer on a serving dish and serve sliced with the sauce.
Roast Turkey Breast

Serves: 4

Nutritional Information (per serving):

Calories: 463 | Fat: 27 g | Net Carbohydrates: 1 g | Protein: 50 g

Ingredients:

  • 2 pounds turkey breast
  • 1/4 cup butter, softened
  • 2 cloves minced garlic
  • 1 tsp Himalayan salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 tsp dried basil
  • 1/4 tsp dried sage

For the gravy:

  • 1/2 cup chicken broth
  • 1/4 tsp xanthan gum
  • 1 small shallot
  • Turkey drippings

Directions:

  1. Preheat your oven to 375 degrees F.
  2. Pat the turkey dry. Loosen the turkey skin to separate it from the breast without removing.
  3. Combine all the turkey ingredients in a small bowl then mix. Spoon the herb mixture under the skin of the turkey and rub it on the breast. Rub some of the mixture on the skin as well.
  4. Place the turkey in a covered skillet and roast in the oven for 45 minutes.
  5. Remove the lid and continue to roast for another 15 to 20 minutes. When cooked through, set aside.
  6. To prepare the gravy, use the same skillet with turkey drippings, add the shallots and cook until tender over medium heat.
  7. Add the xanthan gum and broth, stir and simmer until it thickens.
  8. Sliced the turkey breast and serve with the gravy.
Roasted Garlic Butter Herb Turkey

Serves: 12

Calories: 241 | Fat: 14 g | Net Carbohydrates: 0 g | Protein: 26 g

Ingredients:

  • 2 gallons water
  • 2 1/2 cups Kosher salt
  • 12 pounds whole turkey
  • 1/2 cup butter, softened
  • 1 tbsp fresh sage, finely chopped
