Almost everyone I know who wants to lose weight is taking up the keto diet. And most of them cant sustain it because they are drastically trying to change their existing lifestyles. People are depriving themselves of the foods they have eaten all their lives simply because they cant stand looking at their heavier selves in the mirror.

I love how keto is encouraging a lot of people to take that first step towards leading a healthy lifestyle, but I also worry about how a lot of people get it wrong. Ingredients:

  • 1 large egg, beaten
  • 1 teaspoon fresh parsley, finely chopped
  • 4 tablespoons heavy cream
  • Salt to taste
  • Pepper powder to taste

Method:

  1. Whisk together all the ingredients in a bowl.
  2. Pour into a small heatproof custard cup or ramekin. Fill up to half. Use 2 ramekins if desired or use a small heatproof bowl.
  3. Let the air fryer preheat to 390 F
  4. Place the cups in the air fryer basket.
  5. Air fry for 5 minutes for softer souffls or for 8 minutes for firm.
  6. Serve hot.
Eggs Benedict Casserole

S erves: 2

Ingredients:

For casserole:

  • 5 ounces Canadian bacon, sliced or thinly sliced ham
  • 4 large eggs
  • 2 teaspoons butter or olive oil
  • 6 tablespoons heavy cream
  • teaspoon garlic powder
  • 1 tablespoons Dijon mustard
  • 1 teaspoon onion powder
  • Sea salt to taste
  • Pepper to taste
  • A pinch paprika

For hollandaise sauce:

  • 3 egg yolks
  • 6 tablespoons butter, melted
  • Cayenne pepper to taste
  • 1 tablespoons lemon juice
  • Hot sauce to taste
  • Sea salt to taste

Method:

  1. Retain 5 slices bacon and cut the remaining slices into small pieces.
  2. Place a skillet over medium heat. Add butter. When butter melts, add chopped bacon and cook until brown. Turn off the heat.
  3. Whisk together in a bowl, eggs, cream, onion powder, garlic powder, Dijon mustard, salt, pepper, paprika and cream. Add most of the cooked bacon and stir.
  4. Place the retained bacon slices in the casserole pan (accessory of the air fryer that fits inside the air fryer.
  5. Pour the egg mixture into the pan.
  6. Let the air fryer preheat to 350 F
  7. Place the casserole pan inside the air fryer.
  8. Bake for 15 minutes.
  9. Sprinkle the remaining chopped bacon on top.
  10. Bake for few more minutes until set.
  11. To make hollandaise sauce: Add yolks and lemon juice into a stainless steel bowl and whisk until it increases from its original quantity.
  12. Place the bowl in a double boiler (the bowl should not touch the water in the double boiler). Keep whisking. Add butter, a little at a time and continue whisking until the sauce is thick and creamy.
  13. Turn off the heat. Add hot sauce, salt and cayenne pepper and whisk well.
  14. Serve egg benedict with hollandaise sauce.
Egg Roulades stuffed with Spinach, Roasted Red Pepper and Goat Cheese

Ingredients:

  • 3 eggs
  • 1 tablespoon milk
  • 2 tablespoons heavy cream
  • Melted butter, to brush
  • 1 tablespoon arrowroot powder
  • Freshly ground pepper to taste
  • Salt to taste
  • cup spinach, chopped
  • cup roasted red peppers, chopped
  • 1 ounce goats cheese, crumbled

Method:

  1. Add eggs, cream, arrowroot powder, salt, pepper and milk into a bowl and whisk well.
  2. Line an air fryer baking pan that fits into the air fryer with parchment paper.
  3. Pour the egg mixture into the baking pan.
  4. Let the air fryer preheat to 350 F.
  5. Place the baking pan carefully in a preheated air fryer and bake for 5-6 minutes or until the eggs are set. Gently loosen the edges of the egg with a blunt knife. Let it remain in the baking pan.
  6. Scatter spinach all over the hot eggs (leave inch from the border on one of the edges). Sprinkle goats cheese, roasted pepper, salt and pepper over it.
  7. Now roll the egg with the help of the parchment paper into a tight roll.
  8. Place the baking pan back in the air fryer.
  9. Air fry for 5-6 minutes.
  10. Remove from the air fryer and cut into 2 equal pieces and serve.
