Ingredients

  • 4 medium-sized Yukon Gold potatoes, quartered
  • 1 (3 lb.) boneless pork loin roast
  • 3 tbsp. chopped fresh rosemary.
  • cup finely chopped flat-leaf parsley
  • 3 baby carrots, peeled and cut into 2-inch pieces
  • 1 tsp. fresh ground black pepper.
  • 2 tbsp coconut oil, divided
  • 1 large turnip, cut into 8 wedges
  • 1 cup unsalted chicken stock
  • 4 garlic cloves, finely minced
  • 1 tbsp. chopped fresh thyme.
  • 2 tsp. kosher salt
  • 1 tbsp. finely grated lemon zest (from 1 lemon)

Instructions

Combine the turnip, carrots, and potatoes in a 6-quartz slow cooker, cover the lid and cook for an hour on high heat.

While it cooks, mix the rosemary, salt, thyme, and pepper in a medium bowl and set aside.

Then, paint the pork with 1 tablespoon of coconut oil and submerge it into the thyme mixture, pressing it until evenly.

Warm the remaining oil in a skillet, toss in the seasoned pork and cook until browned, turning frequently.

After 12 minutes of cooking, fold the vegetables, pork, and reserved thyme mixture into the slow cooker and cook under reduced heat.

When the inserted thermometer reads 138F and the vegetables are soft. Remove the meat to the cutting board.

Let it stand for 5 minutes before cutting it into bold, thick slices.

Arrange them on a plate or platter, followed by the vegetables.

Then, drizzle the parsley, garlic, and zest over the pork and serve with the juices from the crockpot.

  • 3 cups water
  • 1 tsp. pumpkin pie sauce.
  • 1 tsp. cinnamon powder.
  • tsp. salt
  • Cooking spray for coating the slow cooker
  • Chopped pecans for serving

Instructions

1. Coat the slow cooker with cooking spray or any oil.

Toss all the ingredients into the pot, set the slow cooker to cook for 6 hours, and switch to warm. Let it cook overnight.

Open the pot in the morning and stir well to blend because the oats will settle beneath the pot.
