In this recipe cookbook you will find nothing but strawberry recipes for the strawberry lover within you. Every recipe in this book has strawberries in it in some form or another. Some recipes are dominated by the presence of strawberries while others have small accents of strawberries in them. None the less, I guarantee you that every recipe you find in this book will have strawberries in it and please your senses.

Before we go into the recipes I would like to give you a little need to know knowledge about strawberries and what some of their benefits are. Being one of the number one fruits doesnt just happen or no reason. Aside from their great taste strawberries have numerous health benefits. Lets take a look at some now before we began blending up some great smoothies shall we?

- Strawberries boost immunity

Strawberries serve as a wonderful source for vitamin C. All mammals can produce vitamin C on their own but not humans. This is why its important to get your daily requirement. There is about 51.5 mg of vitamin C in one serving of strawberries which is about half of your daily requirement. Vitamin C is full of antioxidants and boost your immune system.

- Strawberries promote eye health

Strawberries have antioxidant properties that can also prevent cataracts which can lead to blindness. The vitamin C in strawberries helps the eye in a whole by fighting off free radicals, from UV rays of the sun and strengthen the eye's cornea and retina.

- Strawberries help fight cancer

Antioxidants help with cancer prevention, and a healthy immune system is the bodys best defense against cancer. Antioxidants neutralize the potentially negative effect Free-radicals can have on our cells helping our bodies fight off cancerous growth.

Ingredients:

  • 1 c. almond milk
  • 1 c. frozen strawberries
  • c. fresh blueberries
  • 3 Medjool dates (pitted)
  • Milk (optional)

Toppings:

  • 2 tbsps. granola
  • peeled kiwi, sliced
  • 2 fresh strawberries
  • 1 tbsp. chia seeds

Instructions:

1. Pour the milk into a food blender, add the strawberries, blueberries, and pitted Medjool dates and blitz until lump free.

2. Add a drop milk if necessary to achieve your desired consistency.

3. Pour the smoothie into bowl and top with granola followed by kiwi, strawberries and chia seeds.

Big Breakfast Coconut and Strawberry Granola

Time: 35 mins

Ingredients:

  • 1 c. rolled oats
  • 1 c. pecans, chopped
  • Pinch sea salt
  • 2 tbsps. coconut sugar
  • 3 tbsps. melted coconut oil
  • c. pure maple syrup
  • c. desiccated coconut
  • 1 oz. unsweetened freeze dried strawberries
  • Bananas (peeled and sliced)
  • Milk

Instructions:

1. Preheat the main oven to 340 degrees F,

2. In a mixing bowl, combine the oats with the pecans, salt, and sugar, stirring well to combine.

3. In a pan, add in the coconut oil and syrup and over moderate heat, warm for a few minutes, while frequently whisking until the oil and syrup are fully incorporated.

4. Pour the oil-syrup over the dry ingredients and stir well to combine; ensuring that the dry ingredients are evenly coated.

5. Arrange the mixture, in an even single layer, on an ungreased cookie sheet,

6. Bake in the oven for 20 minutes.

7. Remove from the oven, sprinkle with the desiccated coconut and toss to combine.

8. Rotate the cookie sheet, to ensure an even bake and bake for 5-7 minutes, while taking the mixture doesnt burn. The granola is ready when its a deep golden brown and emits its fragrance.

9. Allow to completely cool.

10. Add the strawberries and toss to combine.

11. Top with sliced bananas and milk.

12. The granola can be stored in at room temperature, in an airtight container for 2-3 weeks.

  • Pinch cream of tartar
  • 1 c. buttermilk
  • tsp. vanilla essence
  • 3 tbsps. butter (melted, divided)
