1. Eggplant Lasagna Casserole
Eggplant lasagna with a delicious red pepper and mushroom meat sauce.

Ingredients:
- 2 eggplants, peeled and sliced lengthwise into strips
- Coconut oil
- Salt and pepper
For the meat sauce:
- 1 1/2 lbs. ground sirloin or 1 1/2 lbs. turkey breast
- 2 tbsp. coconut oil
- 2 onions, chopped
- 3 cloves chopped garlic
- 1 red pepper, chopped
- 1 (16 ounce) package sliced mushrooms
- 1 tbsp. of oregano, basil and thyme each
- 1 tsp. fennel seed (optional)
- Salt and pepper
- 1 tsp. red pepper flakes (optional)
- 1 cup chopped spinach
- 2 cups tomato sauce
- 1 cup diced tomatoes
For the cheese mixture:
- 2 cups low-fat farmers cheese
- 2 eggs
- 3 green onions, chopped
- 1 cup shredded low-fat mozzarella cheese (optional)
Directions:
Preheat oven to 425F. Oil cookie sheet with coconut oil and arrange the eggplant slices on top. Sprinkle with salt and pepper. Bake for 5 minutes on each side. Remove and set aside. Lower oven temperature to 375F.
Brown onion, meat, and garlic in coconut oil for 5 minutes. Add mushrooms and red pepper and cook for 5 minutes. Add tomatoes, spinach, and spices and simmer for 5-10 minutes.
Combine the farmers cheese, egg, and onion mixture in a medium-sized bowl. Spread 1/3rd of the sauce in the bottom of a casserole dish. Layer one half of the eggplant slices and one half of the farmers cheese. Repeat. Add the last layer of sauce and then mozzarella on top.
Cover with foil and bake for 1 hour. Remove foil and bake for a few more minutes or until cheese is browned. Let it rest 10 minutes before serving.
2. Chicken Cacciatore Casserole
A simple Italian dish with mushrooms, tomatoes and herbs.
Makes: 8 servings
Prep: 10 mins
Cook: 1 hr.
Ingredients:
- 4 lb. chicken thighs, with skin on
- 2 tbsp. olive oil
- 1 sliced onion
- 1/3 cup water
- 1 sliced red or green bell pepper
- 8 oz. sliced cremini mushrooms
- 1/2 tsp. ground black pepper
- 1 tsp. dry oregano
- 3 cups peeled and chopped tomatoes
- 1 tsp. dry thyme
- 1 sprig fresh rosemary
- 2 sliced garlic cloves
- 1 tbsp. fresh parsley
Directions:
Pat the chicken on all sides with salt. Heat the olive oil in a cast iron skillet on medium. Brown few chicken pieces skin side down in the pan for 5 minutes, then turn. Set aside. Make sure you have 2 tbsp. of the rendered fat left.
Add the onions, mushrooms and bell peppers to the pan. Increase the heat to medium high. Cook until the onions are tender, stirring, about 10 minutes. Add the garlic and cook a minute more.
Add the water. Scrape up any bits and simmer until the water is reduced by half. Add the tomatoes, pepper, oregano, thyme and a tsp. of salt. Simmer uncovered for 5 more mins. Put the chicken on top of the tomatoes, skin side up. Heat the oven to 375F. Turn off the heat on the stove. Cover the skillet and put it in the oven.
Bake for an hour. Add rosemary and bake for 30 minutes more. Garnish with parsley. Serve.
3. Spiced Baked Fish
Moist whole fish is covered with a spiced onion mixture giving you a delicious and cook dinner option that the whole family will love!

Ingredients:
- 2 lb. whole fish, scaled and cleaned
- 2 onions, sliced
- 4 cloves garlic, crushed
- 1 cup fresh parsley, chopped
- 1 cup fresh cilantro, chopped
- 1 tbsp. coriander powder
- - tsp chili powder
- 3 tbsp. lemon juice
- 3 tbsp. oil
- Salt and pepper
- Chopped parsley and lemon wedges for garnish
Directions:
Preheat oven to 450 F.
Heat oil in a pan. Add the fish and fry for 2 minutes on each side to crisp up the skin. Remove and place in a baking pan.
Add the onions to the same pan and cook till soft.
Add in the rest of the ingredients and cook for a few more minutes.
Spread this onion mixture onto the fish and inside it.
Add 1 cup of water to the baking pan and bake in the oven for 20 minutes or until fish has cooked through.
Serve sprinkled with fresh parsley and lemon wedges!
