Dear Friends
W ell, dreams do come true! Ive always wanted to write a cookbook and open a restaurant. Now one of those dreams is coming true. Im still waiting on the restaurant, but at my age, Im good with just cooking for my family. I do want to thank you for buying my cookbook. It means so much to me.

Ive always loved to cook. I learned while watching my grandmother cook and care for our family. As a child, shelling peas and husking corn were two of my favorite activitiesmainly because those were the times when I got to sit and talk to my Nanny. My first memories of food were about getting closer to my family. I believe thats why I love cooking so much. Cooking is so much more than just putting food together in a way that people will eat it.

We know from all the fast-food chains that people will pretty much eat anything prepared for them. But real cooking involves putting time and effort into food preparation for one reason onlybecause you love the ones youre going to sit down and eat with. To this day, when my family comes to visit, its likely they will all be in the kitchen surrounding me while I stir a pot or roll out a piecrust. There will be lots of conversation and plenty of laughter. Later well crowd around our kitchen table, say grace, and enjoy the food and fellowship. If your family has gotten away from this habit, I would encourage you to begin today to sit down together for a meal at some point in the day.

I know youre all busy and may not be able to do this every day, but when you can, do it. Your family will be blessed by this simple action. With this cookbook, I am not saying I am the greatest cook or the most experienced cook, but I am saying Im a good cook with lots of experience in cooking for family. In this cookbook, youll find recipes each of my family members love as well as some old favorites. I hope you enjoy reading it and cooking from it. May God bless you and your family.

Cast-Iron Skillet
F or most of my recipes, I use a cast-iron skillet or cast-iron Dutch oven. This is how I learned to cook, so of course I think its the best. In our earliest colonial days, the cast-iron skillet was used because modern stoves hadnt been invented. Entire meals were cooked in cast-iron pots. The pots needed to be hung over a fire, so they had a handle, or just stood in the fire on legs. After modern stoves came into use, the legs came off and other types of handles were added.

These days, cast iron can be bought preseasoned, which means its ready for use. If a skillet isnt preseasoned, seasoning it is essential. Seasoning is the process of treating the surface of a cast-iron skillet so your food wont stick and your skillet wont rust. Seasoning is done by applying a thin layer of oil and then heating the skillet. Im going to quickly tell you how its done. First, you should wash and thoroughly dry your pan.

Then coat it inside and out with any cooking oil. Dont forget the lid and outside of the pot. Next, put the skillet in the oven and heat it at 300F for about 30 minutes or at 200F for 2 to 3 hours. Let it cool to room temperature while in the oven, then repeat the process three or four times. Your skillet will now be ready for all these delicious recipes. Be sure to thoroughly dry your skillet and spray it with cooking spray or oil after each use.

I love cast iron because it heats up quickly and distributes heat more evenly than other cookware materials. You can use it on top of the stove or in the oven. And it can be used for quick frying or slow cooking. At one point in American history, cast iron was considered part of a womans dowry.
