Alcoholic
Grand Hot Chocolate
There are some recipes that when combined, they come together to make an even better recipe. Thats exactly what happens with this recipe. Combines the sweetness of the hot chocolate with the orange flavor of the Grand Manier. Yields: 4 servings Ingredients 4 ounces chocolate chips, bittersweet 4 ounces pisco or rum 1/4 cup cocoa powder A pinch salt 3 ounces Grand Marnier or Cointreau 3 cups whole milk Whipped cream Candied orange peel garnish 1 tablespoon sugar 4 ounces milk chocolate chips 4 orange zest (2-inch pieces) Method of Preparation:
- Place the sugar, salt and cocoa powder in a saucepan.
Incorporate the milk, bittersweet chocolate and milk chocolate.
- Over medium heat stir the mixture until the chocolate is completely melted and hot.
- Beat it gently to smoothen the mixture.
- Remove from heat and pour the rum or pisco and Grand Marnier.
- Divide the mixture into four mugs.
- Rub the orange zest in the rim of each mug.
- Top the chocolate pisco with whipped cream, orange zest and candied orange peel.
Hot Eggnog
This great beverage will surprise you if all youve ever known is the common recipe with ice the eggnog is. Take a risk and heat this amazing drink and youll taste how much better it can get. Yields: 8 servings Ingredients 2 teaspoons vanilla extract 4 cups half-and-half 1 cup dark rum 4 large eggs 1/2 teaspoon nutmeg, freshly grated 3/4 cup sugar Method of Preparation:
- Place the half-and-half in a saucepan and heat it without boiling over medium heat.
- In a bowl, place the nutmeg, eggs, sugar and vanilla.
- Whip the ingredients together and begin to gradually incorporate 1 cup half-and-half.
- Pour the egg mixture to the saucepan.
- Cook the mixture over low heat while stirring constantly until the mixture is thick, it should take about 2 minutes.
- Place the mixture in a blender and blend a small amount at the time until frothy.
- Pour the rum in 8 heat-proof glasses.
- Divide the mixture among the 8 glasses.
Eggnog Latte
One of the all-time favorite drinks for this season is the classic eggnog. Mixing eggnog with some coffee in the morning will definitely boost your day and holiday mood. Yields: 2 servings Ingredients 1 1/3 cups eggnog 3 ounces brewed coffee 2/3 cup 2% milk Method of Preparation:
- Place the milk and eggnog in a saucepan.
- Heat the mixture for 5 minutes over medium-high heat.
- Divide the brewed coffee in two coffee mugs.
- Pour the milk and eggnog mix on top of the coffee.
- Serve immediately.
Mulled Wine
A Christmas favorite for many, mulled wine is hot sweetened and spiced red wine and it smells just as good as it taste. A must-drink for at the Christmas dinner.
Yields: 8 servings Ingredients 1 orange, juiced and zested 1/4 cup honey 4 cups apple cider 3 star anise 25 fl oz red wine, cabernet sauvignon 4 whole cloves 4 oranges, peeled 2 cinnamon sticks Method of Preparation:
- Pour the wine in a sauce pan and incorporate the honey, zest, star anise, cider, juice, cloves and cinnamon sticks.
- Bring the mixture to a boil.
- Simmer during 10 minutes on low heat.
- Remove from heat and pour the mixture in mugs.
- Garnish with orange peels.
Mulled Cranberry Port
As we all know, cranberry is always present during the holiday season. Mix it with some port, add some sugar and a bit of spice. Yields: 12 servings Ingredients 3 ounces fresh ginger, peeled and thinly sliced 1 cup freshly squeezed orange juice 8 star anise 9 1/2 cups cranberry juice 1/2 cup water 6 whole allspice berries 4 tablespoons sugar 6 cinnamon sticks 1-1/2 cup port 12 cinnamon sticks, for garnish 12 kumquat rounds, thinly sliced for garnish Method of Preparation:
- Place the ginger, star anise, cinnamon sticks, orange juice, allspice berries, water, sugar and cranberry juice in a saucepan.
- Over medium heat, bring the mixture to a simmer.
- Remove from heat. Cover the pan and let it stand up to one day.
- Before serving, incorporate the port to the mixture inside a saucepan.
- Bring the mixture to a simmer. Make sure the mixture doesnt come to a boil.
- Strain the mixture and divide between glasses.
- Garnish each serving with cinnamon sticks and kumquat slice.
Scandinavian Glgg
If the Scandinavians know anything, its how to get through a harsh winter. Glgg is their secret weapon against the cold.
Well not really secret, but dont let that stop you from trying to this delicious hot drink. Yields: 4 servings Ingredients 3/4 cup port wine 1-1/2 cup fruity red wine (Beaujolais) 1 tbsp brandy, or to taste 3 tbps rum, or to taste 1/4 cup white sugar, or to taste 1/4 cup raisins 1 (2 inch) cinnamon stick 3-3/4 whole cloves The peel from 1/4 orange cut into thin strips 1/4 cup slivered almonds 3/4 tsp cardamom pods Method of Preparation:
- Tie the orange peel, cinnamon stick, whole cloves, and cardamom pods in a cheesecloth.
- On medium low heat simmer the port, red wine and the spice containing cheesecloth, dont let it boil.
- Add in the sugar, brandy and rum and stir for 5 minutes until completely dissolved.
- In a bowl mix together the raisins and almonds.
- Take the cheesecloth out of the Glgg.
- Pour the hot Glgg in 4 mugs and in each mug stir in a spoonful of the raisin almond mix.
- Enjoy.
Buttered Rum
If you enjoy drinking dark rum but you want to spice things up and get in a winter mood this recipe is for you. This smooth hot rum will definitely keep you warm. Yields: 4 servings Ingredients 1/2 teaspoon ground nutmeg 3 cups boiling water 1/2 cup dark brown sugar Fresh orange juice 3/4 teaspoon ground cinnamon 4 ounces unsalted butter 6 ounces dark rum 3/4 teaspoon ground ginger 1 teaspoon grated orange zest Method of Preparation:
- Place the cinnamon, sugar, butter, nutmeg, orange zest and ginger in a bowl.
- On medium speed, beat the ingredients with an electric mixer for 1 minute.
- Pour 3 tablespoons dark rum with 2 tablespoons of spice butter in a heatproof glass.
- Incorporate 3/4 cup boiling water to the glass.
- Stir the drink until combined.
- Top with a squeeze of the orange juice.
- Repeat for all servings.
