Before We Start
Preparation time:
Most of the recipes in this book are quick to prepare, to ease your daily schedule.
Can I freeze the dishes? I dont recommend freezing, but you may do so depending on your lifestyle. Please note that the foods texture might change during the freezing process.
The amounts in the recipes fit standard measurement cups which can be purchased in baking stores. A cup contains 250ml, and a tablespoon contains 15ml.
This book addresses both female and male parents.
The recipes in this book are suitable for kids, as well as adults.
The quantities given in the recipes do not produce uniform servings . Some are planned for individual infant servings and others can serve both you and your baby.
Every baby eats different amounts. Try out the recipes and adapt the quantities to your baby's needs.
About me
My name is Nataly Shvinkelstain, and I grew up in Israel. Looking back - I have always been interested in medicine and cooking. My late grandfather was a dentist and he was an inspiration for me. He single-handedly built the first dental clinic in Holon, a town in Israel, and prospered thanks to his humanistic attitude, compassion and empathy. His favourite hobby was cooking, and he devoted many hours to it.
Growing up, health was not a primary concern. The food I ate as a child was very unhealthy. My family and I loved meat, cheese and processed foods; I even used to smoke for several years and of course it had a very negative impact on my health.
Today Im a naturopath who is raising two children who have been vegan since conception. Both were exclusively breastfed and raised without vaccines, using the least amount of conventional medicine possible. Since 2008, I treat people using the natural approach and do my best to avoid the inclusion of chemicals and harmful materials. I believe in the prevention and treatment of chronic diseases, even when their source is genetics, since genetics is influenced by our lifestyle. The development of most common and chronic diseases is greatly affected by nutrition, stress and exposure to toxins. My treatment is done through nutritional changes and customized natural dietary supplements.
As part of my work in the clinic, I guide parents of babies and children and accompany them on their route to a balanced, vegan nutrition. I treat diseases in infants and children, assist in managing acute medical conditions in infants and children, and provide guidance for a healthy lifestyle. My goal is to lower the patients exposure to pollutants and chemicals, improve their health, and prevent diseases.
Who Is This Book For?
I wrote this book for parents who want to raise their children in the best health possible, according to Nataly Shvinkelstains approach, through a healthy vegan diet and natural lifestyle. It is meant for parents who are in need of recipes and information on the stages of infant development from the age of six to twelve months.
The guidance in this book is general and suitable for healthy babies. In situations where there is a nutritional lack or health imbalances, please individually consult an expert vegan naturopath for healthy and balanced diet.
Why I Wrote This Book
Over the years, I have accumulated much knowledge on the subject of healthy eating. At the same time I learned how the prevalent diet in the modern world is unhealthy, as many children are eating more industrial and processed food and less healthy and nutritious food.
The vegan lifestyle is not a passing trend, but a way of life. Still, many of us do not know this and need information and tools to help them implement a balanced and healthy vegan diet.
Im eager to share and expose the knowledge I have gathered in recent years and help anyone who wants to improve their lives. I wrote this book in order to guide parents in providing a balanced vegan diet for babies, to share some of the recipes I cook for my children, and to help others do the same for theirs.
Vegan Children and the Establishment
Today more and more people are becoming interested in veganism and choose this lifestyle with the understanding that they ensure better health for them and their children. Health organizations worldwide also support a vegan diet for all ages and state that it provides proper nutrition.
Those who choose a vegan diet for themselves and their family may experience unpleasant reactions from the medical establishment. There are still quite a few doctors, dietitians and infant health nurses that are not always aware of the damages in animal-based nutrition and react with prejudice and ignorance. The result is that precisely when parents expect a good nutritional advice for their children - it is lacking. This book is intended to fill this void.
This book is based on the positions of many health organizations which support a vegan diet at any age as proper nourishment, one that is ideal for health. Those who implement the guidelines in this book can be assured that their baby gets all the nutritional values it needs.
How Nutrition Impacts Infant's Health?
The embryonic stage
Our body, like that of all living things, is a sophisticated machine that nature has created for optimal functioning, designed to be nourished according to what nature has decreed. The embryonic stage is the stage in which the mother nourishes the fetus through the placenta. The embryos current and future health is determined largely by food and materials entering her digestive system and blood vessels.
First days after birth
During the first two or three days after birth the baby should ideally be nursed from the mother's breast which produces a substance called colostrum. Colostrum is rich in antibodies, positive bacteria and concentrated nutrients that are most essential for the babys protection and immune system. These are not found in processed milk substitutes. At this stage the baby is not hungry and does not need large quantities of breast milk.
In the following days, breast milk quantities grow, providing the baby with fluids and other vital substances. During these stages the milk is affected by the mothers nutrition and health, and it is important that she consumes a balanced diet and compensates for any nutritional deficiencies. When the mother maintains a balanced and healthy diet, her breast milk provides the baby with all of the nutrients necessary for its health.
