Introduction
Modern moms are constantly bouncing fromplace to place. After school activities, work, doctors appointments, even dailyerrands get in the way of the ability to cook a nutritious and tasty meal forthe family.
The ability to cook just about anything in a slow cooker can alterthat imbalance. Slow cookers are the most overlooked andvaluable kitchen appliance in the modern home. Almost everyone has one, butmost people dont realize the versatility of slow cookers. This recipecollection provides just a brief introduction to what these appliances can do.The recipes contain ingredients found in most kitchens, and produce deliciousand healthy results. The goal of feeding a family is providinghealthy food that you can feel good about preparing and serving. Processedfoods are an easy answer, but their nutrient value is lower, and their sodiumcontent is generally higher than home-cooked meals.
This collection strives toprovide a wide variety of options using very few processed items. That said,there are some items such as soup stocks and tomato sauce that are used. As aresult, Ive included a brief prologue with some basic recipes for kitchenstaples that you can make ahead. The recipes in this report call for largeeggs by default, and unless a cooked ingredient is specified, all items are tobe incorporated in the raw state. Since this is a family and diet friendly cookbook,none of the recipes use lard, pork, or alcohol. Major allergens such as peanutsand berries are also largely avoided.

Kitchen Basics
Vegetable Stock Boil 1 large diced onion, 2 large dicedcarrots, and 2 large diced celery stalks in water with 2 tbsp. sea salt and 1bay leaf for 30 minutes. Remove vegetables and save remaining stock.
Chicken Stock Boil 1 small chicken in 10 cups ofwater with2 tbsp. sea salt, 1 large diced onion, 2 large diced carrots, and 2large diced celery stalks for 2 hours.
Remove chicken and vegetables. Saveremaining stock. Beef Stock Boil 2 lbs. beef shin (bone-in) in 8 cups ofwater with 2 tbsp. salt and 1 large diced onion. Tomato Sauce (Marinara) Place 10 crushed Roma or plum tomatoes, 1tbsp. dried basil, 1 tbsp. dried oregano, 1 tsp. salt, tsp. sugar and 2minced garlic cloves in slow cooker with 5 cups water. sugar and 2minced garlic cloves in slow cooker with 5 cups water.
Cook for 3 hours onhigh.
Appetizers, Snacks and Side Dishes
Spinach, Artichokeand Sundried Tomato Dip
Healthy and delicious, this dip is sure to please even thepickiest eaters. The flavors are strong, and match well with cut vegetables,pita chips, tortilla chips and toasted breads for serving.Number of Servings : 6-8
Prep Time :10 minutes
Cook Time :95 minutes (45 minutes high, 45 minutes low, 5 minutes resting)
Ingredients : cup choppedsun-dried tomatoes cup dicedartichoke hearts, marinated in olive oil (or approximately 1 can ifwater-packed) 2 cupschopped frozen spinach cup sourcream 1 cupshredded mozzarella 1 garlicclove
Instructions : 1. Combinesun-dried tomatoes, artichoke hearts and garlic in slow cooker and cook for 45minutes on high or until olive oil from the artichokes is hot. If using waterpacked artichokes, add 1-2 tbsp. 2. 2.
Combinesour cream, spinach and mozzarella in a bowl. 3. Addspinach mixture to slow cooker and cook for an additional 45 minutes on low. 4. Stirand let rest for 5 minutes before serving.
Swedish Meatballs
A classic party appetizer, these meatballs are quick,juicy and filling.Numberof Servings : 6-8

CookTime : 3 hours on high
Ingredients : 1 lb. groundbeef lb. groundturkey cup breadcrumbs cup heavycream 2 eggs 1 medium onion,diced tsp.allspice tsp.ground nutmeg 2 cups beef stock 2 tbsp.butter Salt Pepper

Combine heavy cream and bread crumbs. Set aside. 2. Combine eggs, turkey, beef, onion, and allspice. Setaside. 3.
Pour broth into slow cooker. Add nutmeg. Add salt andpepper to taste. 4. Combine meat mixture and bread crumb mixture. 5. 5.
In a medium saucepan, brown meatballs slightly inbutter. 6. Place meatballs in slow cooker in an even layer. Cookfor 4 hours on low. Arboriorice 2 cups VegetableStock cup Parmesancheese cup Freshchopped basil cup Sun-driedtomatoes 2 Roma orplum tomatoes, diced 2 tbsp.olive oil Instructions : 1. Toss oil and rice together until rice is evenlycoated. Place in slow cooker. 2. Add all ingredients except basil and parmesan to slowcooker.
Cook on high for 2 hours or until all of the liquid has been absorbed. 3. Stir parmesan and basil into risotto. 4. Let rest for 5 minutes before serving.
