There are dozens of different types of pasta available, especially those made by artisanal or specialist pasta producers.

You will be able to find them in supermarkets and Italian delicatessens. If you use ready-made pasta, go for the ones made with durum wheat and fresh eggs. Excellent dried pasta brands, as well as an incredible selection of pasta in different colors, are now available from an increasing number of delicatessens and supermarkets. Use small pastashells, puntalette, baby macaroni, or trofie twists, for instanceto make dishes like pastasotto (risotto made with pasta instead of rice). Medium-size pasta like penne, fusilli, or dondolini (to name but a few) are suitable for many recipes, including cold pasta salads. Spaghetti, linguine, fettuccine, and tagliardi are the perfect pasta types for one-dish meals.
