Chapter 1: Great Taste, Small Waist!

Before you read the next few pages, take a moment to push aside everything youve been taught about weight loss. Its all wrong. The power to transform your waistline is not about counting calories, points, deprivation, gyms, or chewing on celery sticks. Not only will you lose up to 4 to 9 lbs. this week, youll also look and feel younger, experience greater confidence than ever before, and lessen your risk for disease.

Growing up in a Mexican American home, I was taught to appreciate carbs. My grandmother believed it was the key to a persons heart. She cooked up all kinds of tantalizing tastes in the kitchen, and my sister and I enjoyed every bite. Truly, I loved her for it. As I approached adolescence, I started to realize I couldnt keep up with the other kids at recess. On top of being winded, I could tell my round belly was getting attention. I assumed my growing waistline was attributed to my love for food. Suddenly I couldnt eat without experiencing remorse. Looking back, it was my self-esteem that was really taking a hit.

My struggle with weight carried over into adulthood. At one point I was 40 lbs. overweight and completely unhappy. I knew I needed to make a change. I wish I could say at that moment I figured it all out and everything turned up roses. Unfortunately, that wasnt the case. Even after focusing my career on weight loss and fitness as a personal trainer, I still only experienced small victories and the occasional stretch of success with various dieting trends. Inevitably, the numbers on the scale would creep back up over time. It was incredibly frustrating because according to the widely accepted fitness mantra calories in, calories out I was doing everything right.

Something was off, and I felt it. Calories and exercise had become my life. I wasnt living in that Mexican American home anymore. I was in control of the meals I was eating every dayto the point of being a little obsessive about it. I completely stressed myself out counting calories and filling my schedule with dreaded trips to the gymnot to mention the even more dreaded trips to the scale. The fluctuations in weight continued. I wanted my smaller waistline to stick around for more than a weekend trip to the beach with my family. I also wanted to be healthier and have more energy. Honestly, I wanted to be happy.

At that point in my career, I had developed a niche diet tailored to athletes. I remember receiving a call one day from the kitchen of Chef Emeril Legasse. He extended an invitation to cook some of my recipes on his Food Network show. I was floored. It was my first time cooking on national television. Emerils enthusiasm for flavor was contagious, and the experience made an impression. A year later, I launched an entire cookbook. I suddenly found myself cooking on Good Morning America , the Today show, The View , and even cooking with the queen of the domestic world, Martha Stewart. Without planning on it, I had somehow assumed the role of celebrity chef.

I loved cooking, and thought the whole calories are king theory was a pretty open and shut case. Still, I wondered why it wasnt providing lasting results in my own life. More importantly, if I was stressed counting calories, I knew other people were struggling as well. Plus, the obesity epidemic was growing no pun intended. Either it was our fault for being overweight, or all the experts had it wrong. It was time to reopen this calorie cold case and see what I was missing. As I pulled back the curtain of fitness fads and health guru popularity contests, I found something startling.

CALORIES DONT COUNT

In my first Belly Fat Cure book, I explained how weve been duped by this calorie trend for years. And the media keeps driving us further down this road. There are countless dieting fads and weight-loss reality shows that capitalize on this theory. Many of you have watched the drama unfold on shows like The Biggest Loser as grossly obese contestants get a second chance at life by spending hours in the gym getting yelled at to shape up or ship out. Its inspiring at times, yes, but its also paralyzing. This model of weight loss less-than-subtly implants this seed of doubt in your mind that sounds something like this: If this is what it takes to make a change, Ill never be any different.
