Like most dieters, I found the idea of using fat as a main fuel source for my body completely foreign. I had no idea what a macronutrient was or why one macronutrient may be better for me to utilize for energy than another. I believed that good food was anything with a low amount of fat or sugar, and bad food was everything else. After a thorough overhaul of my carb-laden kitchen, I began the process of entering ketosis and embracing my new way of life. During the first few weeks of keto, I had some incredibly positive changes in my mood, energy, and weight.
Though it was hard to believe at first, as time went on and the symptoms I had suffered from faded, the proof was hard to ignore. I began to accept the fact that not only could my body operate on an alternative fuel source, but that source could also help my metabolism melt away pounds and cure ailments in a way I never thought possible. As I adapted to living in ketosis I wondered, Why isnt everyone doing this? I remembered from my research that people were using this diet, but many were doing so to control seizure disorders and other medical issuesnot to lose weight. According to the Epilepsy Foundation, the keto diet allows many epileptics to live a much more controlled lifesome are even completely free of symptomswhich is a miracle for those who once suffered dozens to hundreds of seizures per day. Even though I came to keto with different goals, with this kind of healing history the efficacy of the diet was undeniable. It very quickly shifted from being a diet to a lifestyle for me.
The impact that keto has had on my life is incredible. I am finally able to control my weight and energy levels by eating the foods I love, and I have developed a new appreciation for my overall health and nutrition. Recreating some of my favorite meals so they are keto-friendlyand discovering new oneshas been a big part of my success with the diet. Many of those recipes are included here in this book for you.
