AUTHORS NOTE What would this world be like without the heart of a mother to teach her children? How would this world survive without a mothers labor of love in the kitchen? I dedicate this book to all the mothers who have chosen to homeschool.
I was a single mother and homeschooled my daughters for fifteen years. My motto was: The worst day homeschooling was better than the best day in public school. The second hardest decision after choosing to homeschool is deciding when is the right time to return to traditional schoolif at all. My first daughter was homeschooled all the way through high school. Regardless of where you are in your homeschooling journey, I hope you find Food for Thought: Simple and Easy Recipes for Homeschooling Families a cookbook that can encourage creativity. Each chapter has a Food for Thought introduction with homeschooling ideas.
A Food for Thought quote accompanies each recipe to stimulate discussion. Many of the quotes come from people we studied, books we read, and from the Bible. All of the recipes are easy, inexpensive (except for the grouper), and a spice of variety. One chapter is devoted to the young cook. I hope you make fond memories in the kitchen that you will remember long after the food is eaten. Some of our best memories (and funniest) homeschooling days took place in the kitchen.
Homeschooling as a single mother was never easy, but God gave me the strength and perseverance to keep at it for many years. Not only did my children learn a lot, but I also experienced Gods grace. With Gods help, anything is possible. The best recipe of all is love from the heart wrapped in prayer.

6 SERVINGS 1 large onion 1 green pepper chopped 1 cup frozen Italian meatballs, sliced 1 three-ounce package pepperoni chopped 1 32-ounce jar spaghetti sauce 2 ounce jar mushrooms 1 cup shredded mozzarella cheese 1 12-ounce box spaghetti noodles Defrost meatballs, slice, and add onions, peppers, pepperoni, sauce and mushrooms. Simmer about 20 minutes.
Cook noodles. Spray casserole pan with Pam. Layer spaghetti noodles first. Top with meat. Finish with cheese on top of meat.

4 SERVINGS Unfrozen pie shell 1 cup milk (skim, 2% or half and half) 1 cup cheese (e.g., Swiss, Cheddar, Mozzarella) 1 egg cup spinach salt and pepper ( optional) 1 cup French fried onion rings Place cheese and spinach in the bottom of the unbaked pie shell. Beat egg, milk, salt and pepper together and pour over cheese. Bake for 20 minutes. Then sprinkle onion rings on top and bake approximately 15 more minutes.

4 SERVINGS 1 pound lean ground beef cup beef broth 1 medium onion, thinly sliced 1 tablespoon curry powder 1 teaspoon ground cumin 2 cloves garlic, minced 1 cup (8 ounces) sour cream cup milk cup raisins, divided 1 teaspoon sugar 12 ounces wide egg noodles, frozen noodles, or 1 / cups long-grain white rice cup chopped walnuts, almonds or pecans Heat large skillet over high heat. Add beef. Cook until browned. Pour off fat. Add beef broth, onion, curry powder, cumin, garlic and cooked beef to slow cooker. Cover and cook on low 4 hours.
Stir in sour cream, milk, cup raisins and sugar. Cover and cook 30 minutes or until thickened and heated through. Cook noodles according to package directions. (I used frozen noodles). Spoon beef curry over noodles.

8 SERVINGS 1 (12-ounce) package noodles 1 pounds skinless, boneless chicken breasts, cut into strips cup olive oil 1 teaspoon minced garlic pound mushrooms, sliced 1 onion, chopped 1 red bell pepper, chopped teaspoon dried oregano leaves teaspoon dried basil leaves teaspoon thyme leaves Salt and pepper to taste 1 cup frozen peas cup grated Parmesan cheese Cook noodles according to directions. In a non-stick skillet, cook the chicken pieces in the olive oil and garlic over medium high heat until lightly brown, about 7 minutes. Add mushrooms, onion, red pepper, oregano, basil, thyme, salt and pepper, sauting until tender. Add the peas, tossing until heated. Add the pasta to the vegetable mixture, combining well.
