Hashbrowns Casserole

Ingredients

  • 2 lbs frozen hash browns
  • 1/2 cup margarine or 1/2 cup butter, melted
  • 1 (10 1/4 ounce) cans cream of chicken soup
  • 1 pint sour cream
  • 1/2 cup onion, peeled and chopped
  • 2 cups cheddar cheese, grated
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Grease with cooking spray, an 11 x 14 baking dish and set the oven to 350 F to preheat.
  2. Mix all the Ingredients together, add to the baking dish and bake until brown on top or for 45 minutes.

Variation: - You can add cream of mushroom soup as well and it will taste equally good without butter. Fat free sour cream and browned bulk sausage will be nice additions.

3 Meat Breakfast Pizza

Ingredients

  • 1 prebaked refrigerated 12-inch pizza crust, at room temperature
  • 1 (2 1/2 ounce) packages country gravy mix
  • 1 cup milk
  • 1 cup water
  • 1 cup chopped sausage links, cooked
  • 1 cup chopped ham, cooked
  • 1 cup bacon bits, cooked
  • 1/2 cup milk
  • 2 tablespoons margarine
  • 8 eggs
  • 1 1/2 cups shredded cheddar cheese

Directions

  1. Add water and milk to a saucepan and set an oven to preheat at 400F.Whisk the gravy mix to bring to a boil and let it simmer for 2-3 minutes until it becomes thick.
  2. Beat eggs with milk. Take a large skillet to melt margarine and add the beaten eggs; scramble it into small chunks.
  3. Place the pizza crust on a cookie sheet or stone. Spread the gravy on the pizza, add meat on the gravy layer and top it with the scrambled eggs. Add salt and pepper.
  4. Sprinkle a generous amount of cheese on top and bake for 10-15 minutes at 400F or until the cheese starts to melt and bubble. Take out of the oven and serve hot after cutting into cones.

Variation: - You can add green onions to the meat mixture. They taste even better.

Poor Man's Breakfast

Ingredients :-

  • 2 tablespoons butter, divided (or to taste. We love lots.)
  • 2 slices bread, with a hole made in the middle to fit an egg yolk
  • 2 large eggs
  • salt, to taste
  • black pepper, to taste

Directions :-

  1. Melt half of the butter in a large frying pan, over medium heat. Arrange the slices of bread into the frying pan.
  2. Crack an egg at the centre of the pan, making a well. Sprinkle salt and pepper. Cook for 2-3 minutes.
  3. Add the rest of the butter, and flip over the bread with the egg at the centre in a way that the yolk does not break. Cook for another 2-3 minutes.

Variation: - It is a perfect breakfast to be served with berry smoothed and fried turkey bacon.

Healthy Breakfast Bowl

Ingredients

  • 1 apple, diced
  • 150 g low-fat vanilla yogurt ( 5 oz)
  • 1/2-1 teaspoon ground flax seeds

Directions

  1. Add all the Ingredients together one after the other in a bowl.
  2. Mix and eat.

Variation: You can use red apples and lactose free vanilla yogurt.

Microwave Poached Egg on Toast

Ingredients

  • 1 slice bread, toasted
  • 1 large egg
  • butter, to taste
  • salt, to taste
  • pepper, to taste

Directions

  1. Butter a toast and flatten it with the back of a fork to make the middle of the toast a little well.
  2. Crack an egg into this well of the toast carefully, so that it does not spill.
  1. Prick the yolk quickly and bake the toast in the microwave for about 1 minute on 60-70% power or until the egg is cooked.
Homemade Breakfast Sausage

Ingredients

  • 1 lb ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 1/2 teaspoons sage
  • 1 3/4 teaspoons thyme leaves
  • 3/4 teaspoon savory
  • 1 teaspoon fennel
  • 1/4 teaspoon dried mustard
  • 1/8 teaspoon clove
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon cayenne

Directions

  1. Add all the spices in a bowl and mix them well.
  2. Spread the spice mix over the meat without mashing the meat too much, to make sure that the sausage is not too tight.

Variation: You can omit the savoury and fennel if you like. It will still taste equally good.

Steel Cut Oatmeal for the Crock Pot

Ingredients

  • 1 Cup Steel Cut Oats ( DO NOT Substitute Old-Fashioned Or Quick-Cooking Oats)
  • 4 1/2 Cups Water
  • 1/2 Teaspoon Salt
  • 2 -3 Tablespoons Butter
  • 1/2 Cup Dried Fruit ( Raisins, Prunes, Apricots, Dates) (Optional)

Serve with

  • milk, to taste
  • sugar, to taste
  • cinnamon, to taste
  • maple syrup, to taste

Directions

  1. Add all the Ingredients to a slow cooker of 2 quart. (You can also use a smaller crock pot or crockets, but not a 6 quart cooker).
  2. Cover it with a lid and cook for 6-8 hours on LOW heat.
  3. If a "crust" is formed, scrape it down and stir.

Variation: You can add peanut butter. It really goes well with the oatmeal.

Basic Poutine Recipe

Ingredients

  • cooked French fries
  • cheese curds ( farmer cheese or "squeaky cheese")
  • beef gravy

Directions

  1. Add the cheese curds and French fries together.
  2. Pour in hot beef gravy over the top and wait till the cheese melts.
  3. Dig in!

Variation: You can use a pinch of mozzarella instead of cheese curds and spaghetti sauce instead of beef gravy.

Lettuce Breakfast Wraps

Ingredients

  • 4 lettuce leaves ( I prefer cos, they recommend romaine)
  • 1 tablespoon mayonnaise
  • 2 slices bacon ( cooked crisp and crumbled)
  • 4 tablespoons cheddar cheese ( grated or shredded, use low fat if you wish)
  • 1/2 roma tomato ( small, diced)

Directions

  1. Take 2 of the lettuce leaves and finely slice them.
  2. Mix mayonnaise, tomato, cheese and bacon with the lettuce. Add salt and pepper.
  3. Use this mixture as the filling for the remaining 2 lettuce leaves. Roll the leaves and enjoy!

Variation: You can also add avocadoes to the mixture. They go well.
