Katharinas Spinach Pizza
INGREDIENTS For the dough 4 cups flour 1 13 cups slightly warm water 1 - photo 2

INGREDIENTS:

For the dough:
4 cups flour
1 1/3 cups slightly warm water
1 pack fresh yeast
1 teaspoon salt
1 clove garlic

For the sauce:
cup silken tofu
1/8 cup Alsan bio-margarine, softened
1 clove garlic
1 onion
teaspoon nutmeg
Salt and pepper

For the topping:
1 pack leaf spinach (refrigerated or the same quantity of fresh spinach)
A bit of soy crme
Chopped macadamia
Salt and pepper
Veganic Pizza Cheese (according to taste)
HOW IT WORKS

1. Preheat the oven to 350F.

2. Make the dough: Get all your ingredients to room temperature. Combine them and set aside in a warm place to prove for 40 minutes. Add the finely chopped garlic before rolling out the dough, according to taste.

3. Make the sauce: Whisk the tofu until smooth and add the liquid Alsan margarine. Finely chop the garlic and onion, saut them and add to the tofu. Season with nutmeg, pepper and salt.

4. Make the topping: Defrost the spinach, drain well by squeezing out all the water. If using fresh spinach, wash it and warm it up together with the soy cream. Season with salt and pepper.

Roll out the dough, brush with the sauce and spread the spinach mixture over it. Sprinkle with Pizza Cheese and macadamia. Bake the pizza for about 30-35 Minutes; eventually cover it after 15 minutes (the nuts get brown very quickly)

For the dough:
4 cups flour
1 piece of yeast
1 medium potato
cup water
cup beer
2 tablespoons olive oil
1 teaspoon sea salt

For the sauce:
3-4 tablespoons olive oil
1 medium red onion
1 clove garlic
1 container whole, peeled tomato
1 tablespoon salt
2 tablespoons cane sugar
1 teaspoons thyme, shredded
1 teaspoons oregano, shredded
teaspoon rosemary
1 teaspoon pepper or chili flakes
1 bay leaf

For the topping:
A few brown champignons
yellow paprika
red paprikas
Black olives to sprinkle with 150-200g Veganic Pizza Cheese to sprinkle with

HOW IT WORKS:

1. Preheat the oven to 350F.

2. Make the PizzaTam dough: cook the medium potato, peel it and mash well by using a fork. Set aside. Put the yeast in a cup with water and beer and let it dissolve for a few minutes, then set aside. In a large bowl combine half of the flour, mashed potato, dissolved yeast, 2 tablespoons olive oil and 1
teaspoon fine sea salt. Mix while slowly adding the rest of the flour, until the dough comes together and
begins to pull away cleanly from the bowl. Cover and put in the refrigerator for 1-2 hours to rise.

3. Brush a 16x12 inch baking pan with olive oil (or use baking paper). Spread the dough evenly in the pan,
press it and use a fork to gently pierce small holes on it.

4. Make the PizzaTam sauce: cut the onion in small cubes and mash the garlic. Heat the olive oil in a
larger pan. Saut the onion until transparent, add the garlic and saut a bit together. Add the tomato, cane
sugar and spices according to taste and cook for 3 minutes. Use a mixer to chop the tomato in smaller
pieces (not too smooth) and cook for about 30 minutes. Stir from time to time. As most of the water
has evaporated, spread the sauce on the pizza dough.

5. Make the topping: wash the vegetables. Cut the champignons and paprika in thin slices, the onion in half rings. Rinse the olives under water and allow draining well. Mix the vegetables and spread over the dough. Sprinkle with Veganic Pizza Cheese.
