1) Vegetarian Zucchini Boats

A filling, cheesy appetizer that is absolutely delicious. Baked zucchini stuffed with vegetables and brown rice.

Ingredient List:
- 3 medium zucchinis
- 2 garlic cloves (minced)
- 1 medium onion (minced)
- 1 teaspoon olive oil
- Salt
- 3 cups mushrooms (coarsely chopped)
- 1 pint of cherry tomatoes (chopped)
- 1 tablespoon dry sherry
- 2 teaspoons soy sauce
- 2 tablespoons dill
- 5 cups fresh baby spinach leaves
- 1 cup cooked brown rice
- Pepper
- cup Feta cheese (crumbled)

Preparation:
1. Preheat the main oven to 350 degrees F.
2. First, slice the zucchini in half and carefully scoop out the seeds in order to make space for the filling.
3. Put a of the zucchini flesh to one side for the filling.
4. Transfer the hollowed out zucchini onto a lightly greased baking tray or pan, cut sides facing upwards.
5. Using a non-stick frying pan over medium heat, saut the minced garlic along with the onions in 1 teaspoon of olive oil and a dash of salt.
6. Next, add the mushrooms, cherry tomatoes, and the zucchini set aside earlier, dry sherry, soy sauce and dill. Saut for an additional 2-3 minutes or until the mushrooms and tomatoes are just soft.
7. Rinse the spinach leaves, shaking off any excess water, and add the spinach to the pan. Remove the frying pan from the heat and cover with a lid. Set to one side to rest for a few minutes.
8. Add the rice to the vegetable mix and stir. Season with a dash of pepper.
9. Heap the vegetable and rice stuffing mixture into the zucchini boats, sprinkle with crumbled Feta and cover with aluminum foil. Bake for 20-25 minutes, or until the zucchini is tender when using a fork.
10. Uncover and cook for 4-5 minutes, until the Feta is beginning to bubble.
2) Deviled Eggs with Soy Sauce

Marinad e :
- cup soy sauce
- 6 tablespoons warm water
- 1 tablespoon sugar
- 2 tablespoons sherry vinegar
- 1 tablespoon fish sauce
- 3 cloves garlic (minced)
Fillin g :
- 6 medium eggs
- 4 tablespoons mayonnaise
- 2 teaspoons ginger paste
- 1 teaspoon Chinese mustard
- Scallions (garnish)
- Shredded carrot (garnish)
- Sriracha (dressing)

Preparation:
1. In a small mixing bowl, combine the 6 marinade ingredients, stir until incorporated and put to one side.
2. Place the eggs in a pot, in a single layer. Cover the eggs with 1-2 of water. Over high heat, bring to a boil. When the eggs come to the boil, cover the pan and reduce the heat to low. Continue cooking for between 12-15 minutes. Transfer the eggs to a bath of ice.
3. When the eggs have cooled, peel and completely submerge them in the marinade. Transfer them to the refrigerator for 3-4 hours.
4. Halve each egg and place the yolks in a bowl. Add the mayonnaise, along with the ginger and mustard. Mash the yolks into the mayonnaise-mustard mixture until creamy.
5. Using a plastic spatula, transfer the mixture to a re-sealable zip lock bag, snip the end off one corner of the bag and pipe the filling into the egg halves.
6. Sprinkle with scallions, shredded carrots, and sriracha.

- 10 ounces frozen baby peas
- 3 tablespoons olive oil

- teaspoons black pepper
- 6 ounces feta cheese (crumbled)
- 4 scallions (finely chopped)

2. While the noodles are cooking, make the dressing. In a large mixing bowl, whisk the olive oil with the lemon juice, soy sauce, sugar, salt and black pepper.
