My introduction to the dairy-free community was sudden.
My then-10-year-old son, Isaiah, had been struggling with health issues, and I wouldnt stop digging until I figured out what the cause wasand how I could help him. Turns out, he was not only dairy intolerant, but also gluten intolerant. This was back when people didnt even know the word gluten and there were little to no dairy-free or gluten-free options at the health food store, let alone my local supermarket. As a former bakery owner and food magazine editor, I knew I had the knowledge and experience to change that, not just for my family but also for anyone else who needed to cut dairy and gluten from his or her dietfor whatever reason. Thats when I went into my kitchen and started playing around with di erent ingredients to create dairy-free and gluten-free versions of all the foods Isaiah loved. I failed time after timeuntil the day I didnt.
Once I had cracked the code on how to re-create textures and flavors that were the same or better than the original, I knew I wanted to help other people cook and bake again. Even with all my culinary experience, as a single mom raising two kids, I struggled to cook meals for my family. Having worked in commercial kitchens, I know that any prep is better than no prep, so I started doing meal prep at home. Doing meal prep not only ended my mealtime struggle, but also began saving me precious time and money. Deciding what meals to prep and in which order isnt exactly intuitive, though, and I want to show you how easy it can be to plan, cook, bake, and eat dairy-free. The truth is that changing our dietary habits isnt easy.
We get used to eating whatever we want, whenever we want. Luckily, that perspective shifts fast when you cut dairy from your diet and you suddenly feel energetic and lighter. You feel good. You feel like yourself. That changes everything. Thank you for joining me on this dairy-free meal-prep journey.

Who among us have never asked ourselves the ongoing questions, What am I going to make for breakfast? For lunch? For dinner? The reason I developed meal-prep recipes was partly in response to these questions. And believe me, youl find plenty of answers in the recipes that fol owand even though theyre al dairy-free, you wont feel like youre missing anything. The best part? When you meal prep for yourself or loved ones, you have an arsenal of recipes and dairy-free ingredients at your disposal for the week ahead. 
Before we start talking about meal prep, Id like to address how dairy-free living may be intimidating at first. Im here to tel you it doesnt have to be.
Actual y, cooking and baking dairy-free is easier than you think. When I first started on my dairy-free journey, in response to my son Isaiahs dairy-intolerance diagnosis, I was overwhelmed by the thought that wed never again Once you start feeling betterthanks to eliminating dairy from your dieta mental shift happens and your food options widen. The first step is to remove al dairy foods made from the milk of cows, goats, and sheep, and al its derivativesfrom your kitchen. Then you replace your go-to ingredients with easy-to-make or store-bought dairy-free substitutes that you can eat and that look and taste like the originals. This wil make going or staying dairy-free easier and make meal prep faster. ANTI-AGING: Did you know that hormones found in dairy products can cause premature aging? Slowing the aging clock is just one long-term benefit of a dairy-free lifestyle. CLEARER SKIN: If you get occasional breakouts, eczema, or rashes, eliminating dairy might make a di erence in their frequency and severity.
