1) Chicken noodles soup with extra cream
For lovers of cream and chicken combo, this recipe will be great. Plus, you get to send off cold without compromising your taste.
Cook time 40 minutes
Serves 4
Ingredients
2 cups of cooked diced chicken
4 tablespoons of cooked noodles (drained)
1 cup of chopped celery and onions (1/2 each)
1/8 teaspoon of thyme leaf (dried)
1 cup of carrot and peas (1/2 each, both frozen)
2-3 cups of chicken stock
2 teaspoons of parsley (dried)
teaspoon of freshly grinded pepper
can of cream of undiluted chicken soup
3 teaspoons of butter
A pinch of salt for taste
Method
Melt butter in a medium heating pot, then pour your onions with celery to fry in the melted butter.
Add chicken broth, pepper, thyme, diced chicken and soup and allow to boil for about 20 minutes.
Add the combo of carrot and peas to the mixture and allow to cook for 10 more minutes.
Add the cream and stir for a while before finally adding the salt before the final heating.
Serve it for everyone with either crackers or biscuits.
2) Minestrone Italian soup
For the vegetarians who love to have a taste of Italy right in their kitchen, this is what you need.
Cook time 45 minutes
Serves 3
Ingredients
2 cups of diced tomatoes
1/2 tablespoon of basil (freshly chopped)
1 chopped medium-sized carrot
3/4 cup of macaroni
1 shredded garlic cloves
2 small sized onions (chopped separately)
1/2 chopped zucchini
3/4 chopped medium sized potato
2 cups of water
1/2 tablespoon of soy sauce
2 cups of chopped celery
2 bay leaves
Salt and pepper to taste
Method
Prepare your vegetable broth by adding the soy sauce, chopped potato, bay leaves, 1 cup of chopped onions, 1 cup of carrots, a pinch of pepper and salt in the pot of measured water.
Allow to simmer for 20mins before removing the garlic and bay leave. Then your vegetable broth is ready.
Add the broth into a new bigger pot and add remaining ingredients aside the macaroni, salt and pepper.
Allow the mixture to cook for 15 minutes before adding in the pasta, pepper and salt
Allow the combo with the macaroni to steam till the pasta is soft for your taste.
Then serve and enjoy.
3) Fresh Onion winter soup
Who thinks onions can't make a good soup during winter? This is one nutritious soup that onions can try out during the cold season.
Cook time - 50 minutes
Serve 2
Ingredients
3 perfectly sliced medium-size onions
3 tablespoons of butter
2-4 slices of bread (French toast preferably)
3 tablespoons of freshly shredded garlic cloves
1 cup of unsalted low sodium beef broth
8 tablespoons of any swiss cheese of your choice (gruyere preferably)
1 freshly tapped bay leaf for seasoning.
A pinch of baking soda
Smoothly grinded pepper to taste (black currant)
Salt to taste
Method
Slice the cheese into tiny bits and freeze for consistent taste.
Now add butter to the pot and leave to melt before adding in your onions before pinching in your baking soda. This process should take 2-3 minutes, then your garlic comes next.
Your broth should be added next and covered up to allow for generation into the onions.
After about 20-25 minutes, your mixture is good for the next stage.
Add the proper, bay leave and salt to the steaming mixture and leave for 15 more minutes.
The bay leave can go now, so remove it and put the soup on a grilling machine.
Then cream your bread with the previously frozen cheese and dip it into the soup already on the grill. Leave till it is brown enough to enjoy.
Enjoy with optional garnishing.
