Soup refers to a type of liquid dish that can be served either warm or cold (but often, warm), and is prepared by boiling or simmering meat, vegetables and other ingredients.
Many people consider stews and broths as types of soups, but there are some differences.
For example, a soup has more liquid than a stew.
In France, where soups are a staple during mealtime, there are two primary types of soups: thick soup and clear soup.
Thick soup is typically made by pureeing vegetables or thickening the liquid with flour or starch.
Clear soup is made by boiling and simmering ingredients.

Baked Potato Soup
Lets combine two things you love in one comforting dish: baked potato and soup. Topped with cheddar, chives, bacon and sour cream, this soup is sure to bring you comfort and satisfaction. Serve this soup with crusty bread or fresh green salad.
Serving Size: 4
Preparation Cooking Time: 45 minutes
Ingredients:
1 tablespoon vegetable oil
2 slices bacon
cup onion, chopped
1 lb. potatoes, diced
4 cups low-sodium chicken stock
cup low-fat sour cream
Pepper to taste
cup cheddar cheese, shredded and divided
Chopped chives
Instructions:
1. Pour the oil into a pan over medium heat.
2. Cook the bacon for 3 minutes per side or until golden and crispy.
3. Drain on plate lined with paper towel.
4. Let cool and chop into smaller pieces.
5. Add the onion to the pan.
6. Cook the onion in the bacon drippings for 3 minutes.
7. Add the potatoes. Pour in the chicken stock.
8. Bring to a boil.
9. Reduce heat and simmer for 15 minutes.
10. Take the potatoes and transfer to a plate.
11. Mash the potatoes using a fork.
12. Put it back to the pan.
13. Stir in the sour cream. Season with the pepper.
14. Add half of the cheddar cheese.
15. Then cook for 2 minutes or until the cheese has melted.
16. Garnish with the remaining cheddar, chopped chives and crispy bacon bits.

2 cups butternut squash, sliced into cubes
1 zucchini, cubed
1 cup cauliflower florets
20 oz. white kidney beans, rinsed and drained
1 tablespoon fresh oregano leaves, chopped
Salt and pepper to taste
Parmesan cheese
Instructions:
1. Pour the oil into a pan over medium heat.
2. Cook the onion and garlic for 2 minutes.
3. Add the celery and carrots.
4. Cook for 5 minutes, stirring occasionally.
5. Pour in the broth, tomatoes and squash.
